Notes / Commercial Description:
German inspired sour wheat beer. The obvious and domineering acidity of this beer is obtained by letting the unboiled wort go sour for several days. The Solstice d’Été is made complete by the addition, during the fermentation process, of a phenomenal quantity of whole fruit (raspberries or mangos or cherries) which compensate for the sourness of the beer. The result is a very refreshing beer where both acidity and fruity flavours dominate wholeheartedly.

Deep red with a light haze, lots of carbonation and 3 fingers of Pepto-bismol pink head.

Smells sour and of red berries. Slight hefe like plastic quality, and generally acidic.

Sour with an amazingly fresh bouquet of fruity orchards. Very acidic, like a Cantillon lambic in acidity almost, but it has a hint of sweet thats almost undetectable.

Medium body, lots of carbonation, generally dry but balanced finish.

Got at Brasserie Dieu du Ciel! brewery in Ste-Jerome, Quebec today. Drinking near a lake north of Montreal Sept 25th, 2016.

Stunning appearance. The beer poured a deep ruby red and was capped by a thin, fizzy cap of mauve colored bubbles that quickly dissolved. A very thin halo encircled the liquid. Huge chunks of yeast particles floated around in the bottom portion of the glass.

The aroma was interesting. It was initially comprised of a strange mix of fresh pureed raspberries and dank, musty swamp water. The swampyness seemed to intensify in the first few minutes, but thankfully it soon completely subsided. All that remained was pure raspberry bliss. Super bright and fresh. Slightly sweet and jammy. Put simply, amazing.

The flavor was solid, but the raspberry notes were much more subtle here. Some tart, underripe berry notes appeared on the front end. Later, the raspberry would specifically become more apparent. Loads of sour lemonyness in the center. Wheaty. Really crisp and acidic. The tartness increased as the beer moved along the palate. More berry notes on the back end. The beer finished with loads of lemony tartness and acidity.

The mouthfeel was crisp and appropriately light for the style. A zippy, sprightly effervescence gave the liquid a nice frothiness. After every sip, I got a weird squeaky sensation on my teeth. Not quite "enamel stripping" but approaching this.

I typically think of Brasserie Dieu du Ciel! as being a great brewery for stouts, but this Berliner Weisse is proof that they are more than a one trick pony. Although this beer could use some tweaks and adjustments, it still hit the spot on this late summer evening.

Bottle poured into a tulip

A: Pours burgundy red with a bright reddish/pinkish head, no head retention, no lacing, lots of yeast floating around, good amount of bubbles streaming up the glass.

A: Big aromas of raspberries, subtle sourness, very sweet, also getting some cherries, very aromatic.

T: Not overly sour, touch of tartness up front, raspberries really come through at the end, very dry mouth puckering finish, very refreshing.

M: Light bodied with a good amount of carbonation.

O: Very refreshing, lots of raspberries more so than other beers with raspberries I've tried, subtle sour and tart notes, very nice.

The best berliner weiss I've had to date. Reminds me of Framboisine, a cocktail made with Champagne and raspberries. It's tart but not sour and then it's a lot about fresh rasberries and a bit bout grapes. Great stuff

A- Great artwork on the labeling! The beer itself is a brilliant red-pinky/raspberry color with plenty of small bits of raspberry fruit floating throughout the semi opaque liquid. There seems to be plenty of fine Champagne like carbonation floating up to the top in many small columns. Not much for a head but just a thin ring around the glass and the lacing is very mild as well. This is my first venture into the style so from what I read, this is all pretty normal so I'll go with that!

S- This is 95% raspberry...fresh....tart....real! That is really about it, but there are background aromas of malt, wheat and some pretty serious sour smells on the finish. Wonderful!!

T- This is quite nice and with a huge refreshing quality about it....I feel like I'm drinking more of a handmade raspberry spritzer than anything! Great tart/sour raspberries making up the bulk of the flavor on my palate, there are background hints of yeasty biscuit, and wheat malts to slightly dry out the finish. I agree with another reviewer in that this has a wine like quality about it, but I'm quite ok with this! Again....wonderful!!

M/O- This is surprisingly in the medium bodied range....I'm guessing from the fruit flesh used helps. Fine carbonation, well hidden alcohol, the natural sugars of the fruit balancing any harshness really, and a less than imposing sourness make this a very well balanced brew! I like this style and will definitely seek this one out again....perfect patio beer on a hot summer day!!
