Golden and hazy with lots of carbonation, and topped with 3 fingers of foamy white head.

Smells of Brett, funk, slightly fruity like melon, with hints of oak.

Tastes of Brett, hay blanket, funk, slightly sweet, slightly sour, with hints of fruity floral qualities much like lily of the valley and asian pear. Hints of oak and deep woody quality.

Medium body, with moderate carbonation, this beer is really smooth and pleasant in its mouth feel.

I got this at Brou Ha Ha in Gatineau, Quebec in a pack of 4 special brews from this company. Drinking in Toronto near the airport May 3rd, 2018. Excellent brew.

From a 341ml bottle, dated 2017-10-27. Label and 7% abv differ from those shown above. Served in a tulip.

Pours a slightly hazed, cheerful sunshiney-gold with a scant half-finger of head which doesn't really last long enough to get a good look at.

Smells all clean and sharp with bretty yeast, lemons and balsam.

Tastes just like it smells, sort of sharp and puckery, but tart, not sour. Lemons and white wine, orange zest, resiny pine needles and sugar cookie dough. Crisp and sweet with a long, tart green apple finish.

Feel is full and round with medium body and good carbonation.

An interesting melange of tart, fruity yeast and barrel with aromatic, fruity hops make for a really complicated-in-a-pleasant-sort-of-way palate. 12oz was hardly enough to get to know it.

I don'y know if it is the same version, but I'm having the one released in 2017, and it's 7% abv instead of the 7,5% in the description (and 6,5% on the picture). The color is a deep orange with dense foam but not a lot of retention altough a good lacing. The nose reminds me of sweet apples, some yeast spicyness, and herbal hops. It's also woody and there are some notes of red wine. The taste is a little bit spicy, with wooden notes, some cloves, pepper, a little hop bitterness but not overwhelming. Fairly round. I sense some brettanomyces both in the nose and on the palate.

12 oz. bottle. Pours a hazy orange without much of a head. Smells of grapefruit and orange, some pale malt, and red wine. Tastes pretty much the same. Red wine permeates a grapefruit and orange hop flavor. The hops are not bright, as you would imagine. A little bit of sweetness with oak and bitterness. Red wine lingers in the aftertaste. Low carbonation. Tastes pretty good, but it might be a struggle to drink a whole bottle.

From notes

Appearance: It has a nice hazy golden/orange color to it. It has a nice thick head that dies down moderately slow and leaves nice lacing.

Smell: The aromas definitely give out hints of grapes, some oak, tropical/citrus undertones, Belgian yeast, bready malts and faint cloves.

Taste: Like the aromas, it has some grapes upfront, woody oak, tropical/citrus notes from the hops, Belgian yeast, bready malts and some cloves.

Mouthfeel: It has a low-med carbonation with a nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied by good flavors and aromas.

Looks pretty similar to the original but with a smaller head, very cloudy and some carbonation. The small, wow the smell! It smells like red wine mixed with the floral and fruity notes of hops. In the mouth it's really interesting, you citrusy notes from the hops fallowed by a red wine taste. I'm not a huge fan of red wine but a beer aged in wine barrel is really really good. It feels heavier than the original Dernière Volonté but it's supposed to be the same ABV.

In the Dernière Volonté 2015 Anthologie 4-pack it's really my favorite. (I haven't taste the Hérétique yet though) I'd buy a 6-pack of only the Pinot noir one!

Appearance - this beer pours just like the other derniere volontes, Its a very hazy golden color with 1 finger head that fades quickly. Although there isnt much in the way of head retention carbonation seems more lively than the others.

Aroma - wood, grapes, citrus, floral notes, clove, banana, fresh white bread.

Taste - I get a funky citrus note in the front of this beer followed up by oak and some grapes then bubblegum, clove, banana, white breadand the finish is fairly bitter but still sweet too.

Feel - medium body, prickly carbonation, not as smooth as the others but it suits the beers profile.

Overall - This is a fantastic beer and an overall good addition to the series, all 3 I've tried have been fantastic and I can't wait to try heritique now.

Not sure of the goal here but it didn't work for me. It did smell wonderful, very close to a sweet tart, but that's about all the was good.

Tastes like a pear pissed itself....a fun idea and attempt, but a really unenjoyable experience.
