Notes: This wheat beer was fermented for 18 months in French oak barrels with a mix of Saccharomyces and Brettanomyces yeast as well as with two varieties of lactic acid bacteria, Pediococcus and Lactobacillus. Straw coloured, the beer has oak and green apple aromas. Light bodied, its subtle woody notes balance the beer’s marked acidity.

750 ml. bottle with no date.
Vigorous pour yields a 1/4 inch white head over a bright, golden body with no lacing and head is gone almost instantly. Nose of apple, oak, and slight funk. Very nice semi-dry apple flavor finishing fairly dry and crisp. Near flat with hardly any carbonation. Overall, a tasty offering from our friends up north and it would be a fantastic pairing with a VT cheddar, or any cheese for that matter. Cheers!

Bottle: Poured a clear blonde color ale with a nice large foamy head with OK retention and some lacing. Aroma of tart and funky notes is pretty nice. Taste is a mix between some tart notes with limited acidity, loads of funky notes with some nice Brett notes also discernable. Body is about average with good carbonation. Solid sour beer with nice balance and actually better than the blackberry version.

2015 Vintage.

Poured a bright and hazy yellow colour with a very small amount of bright white head

The nose is full of bretty funk with a light sweetness.

Palate is tart with a slight acidity and full of brett funk. A light slightly buttery sweetness is evident as well that almost become off-putting but doesn't quite get there.

Mouth feel is light with light to moderate carbonation.

Pours straw gold with a light haze and a thin white head. Smells of oaky white wine and light musty funk with some light orchard fruits.

Sour apples and berries, woody white wine, dry finish. A bit watery and very low carbonation.

I would be interested to see what happens to this one with some time. Too bad I only asked for the one.

750 mL bottle poured into a snifter.

Appearance - Pale orange. Tiny white head. Very thin collar.

Smell - A little vinegar. Oak. Honey-like sweetness. Some white grape.

Taste - Oak. Light vinegar. Kinda tart. Sweet pale malt. Some yogurt.

Mouthfeel - Medium low carbonation. Mild sourness.

Overall - DIsappointing from Dieu de Ciel.

A- A straw/golden color. Slightly hazy.

S- Grapes, brett, milder smell. mediocre at best

T- Mellow sour, not too strong, sweeter aftertaste. I feel that in order to not offend many palates, Brasserie Dieu Du Ciel did not appease any either.

M- Under-carbonated, smooth, drinks more like a wine.

750ml bottle poured into tulip 3/12/12 bottle courtesy of some hoser, cheers dude

A clear golden yellow with just a thin film for foam that's gone in a flash leaving no lace, there's a few tiny bubbles popping up here and there but it looks a little still

S funky yeast works well for this one, some earthy, woody, vinous notes, pear and apple cider, funky cheese, a little cereal but its the funk I'm enjoying, pretty nice funky sour I had my nose buried in my glass for a while

T the funks a little toned down compared to the nose, everything else is there but a little faint compare to how strong the nose was, more white fleshed fruity notes the smell

M has a little body but its nearly flat, there's a few bubbles but not enough to give it some life, a little slick and not much for an aftertaste

O smells great and tastes good but needs some life in the liquid, there's a few streams of bubbles popping of the bottom but not enough to give it much life

I'm very stoked just to try this one knowing I won't get another chance, thanks again hoser
