Good maple up front but the chipotle peppers ruin it. They should have stuck to cocoa nibs and maple. This is a terrible mess. Please get back to basics for Prop next year.

Got to try this one on draft last week. Nearly 8 years old and you still get some pepper creeping through. Still some good maple sweetness as well. Really fun beer and has held up great!

Bottled 9/15/16. Poured at 57°. In a word, spicy! Black with murky brown edges; fleeting fizzy dark tan head; no cap retention, no ring, no lace; medium thick legs. Nose is peppers, bourbon, smokey tobacco; chocolate as beer warms. Entry is chocolate, bourbon, hot green chilies sauce; sweetnesses from the maple, but no maple taste detected; bittersweet cocoa nibs on backend. Hot peppers tingle on tongue; light carbonation; full minus body; mouth warmth from 13.1% abv and Chipotle peppers. Overall, Excellent!; lasting hot peppers linger; the maple has faded (fine by me) and the bourbon is mild; spicy!; a BBA Mexican Cake minus the cinnamon; at 5 years old, this beer has held up well - I like!

Oily dark brown color with a centimeter of tan foam. Smells of spicy peppers and cocoa powder. The taste is spicy and smokey peppers with undertones of slightly sweet chocolate. There's a hint of bourbon and oak in the finish. The feel is oily and warming.
I'd say it's mellowed nicely and I'd drink any you may have lying around.

Pours jet black, fizzy dark tan head. Aroma is big chipotle pepper. Some fusel alcohol, bit of roast and very subtle cocoa that you really have to work for. It’s a pepper bomb on the nose, even after 4 years. Taste is much more balanced and much better than the aroma. Quite sweet, significant maple syrup. Fairly prominent chocolate and some oak barrel notes on the back end. Peppery heat is noticeable but not nearly as prominent as the aroma, it compliments the flavor profile nicely but may still even be a bit higher than I would prefer. I imagine fresh that this beer was super hot. As with all BCBs, the ABV is very well masked. Drinkability is surprisingly good considering everything including the peppery heat. Overall, I actually really really dig this. Is it my favorite Bourbon County variant, no but it’s also def not my least favorite. I would say its not even my least favorite Prop (I think it’s better than the double chocolate one). Very much enjoyed, I have one more that I will likely age several more years to see if the peppery heat diminishes even further.

500 ml bottle into a snifter. Bottled 9/15/16, had 10/27/18.
Pours a deep brown, opaque, with no head and a little spotty lacing. Aromas of roasted malt, peppers, chocolate, cocoa, smoke, vanilla, some maple, bourbon- more as it warms, light molasses. The flavor shows more bourbon, then roasted malt, peppers- with a decent amount of heat that lingers, chocolate, cocoa, some maple and vanilla, a light sweet note on the finish. Smooth, a great full body, well carbonated.

Tasted from bottle. Aged 2 1/2 years. Pours black with beige head. Aroma is peppers and cocoa with hints of maple. Taste is very interesting. Really tastes like beef jerky. Smoky sweetness up front with a chewy meaty notes. Finishes with a pepper burn. I know it’s not considered one of the better Props but I like it.
