The Cooper Project is a rotating series of new recipes that highlight Goose Island’s expertise in bourbon barrel-aging.

The third release of 2017, this Barrel-Aged Porter, starts life as a rich porter brewed with chocolate maltsand spices that is then barrel-aged for 3 months in fresh bourbon barrels.

Pours black with rich tan head and very sticky lacing. Nose is a little sweet on this one, some vanilla, caramel, and bread. The taste is lighter than I expected, very smooth and rich vanilla, caramel, sweetness of bread, some barrel notes, and minor ABV hit. A medium beer and easy to drink, this one threw me since I expected a heavy one and its as heavy in flavor but smooth all around..

2/10/18: 12 ounce bottle poured into GI snifter. 8.3% ABV, bottled 14:30 9/11/17. Solid back pour, fizzy thin light tan lacing. Bourbon, chocolate and malt aroma, on the sweet side. Chocolate strongest taste, bourbon light, malt created nice balance. Beer feels stronger than the ABV. Thin texture, firm carbonation, very nice mouth feel. Overall excellent offering!

A: The beer is jet black in color—only traces of dark brown are visible near the corners of the glass when it is held up to a bright light. It poured with a short beige head that died down a bit but consistently left a layer of bubbles on the surface and a narrow collar around the edge of the glass.
S: Light aromas of bourbon from the barrel aging are present in the nose.
T: The taste follows the smell, except that the bourbon flavors are stronger. The bourbon lingers into the finish.
M: It feels medium-bodied and slightly thin on the palate with a moderate amount of carbonation and faint bits of warming from the alcohol.
O: I liked this beer because it still tasted like a porter and the bourbon was well incorporated into the beer but in no way was overpowering.

Porter aged 3 months in bourbon barrels. Poured from a bottle into a Bruery tulip. Beautiful pour. It's dark mahogany, not too viscous, and there a little wisps of reddish light coming through. The head is immaculate. 3 fingers of fine tan foam with good retention. On the nose I get cocoa, toffee, roasted malt, and oak.

Medium-full body with a rich, satisfying flavor and a silky feel. Up front I get toasted malt, cocoa, and graham crackers. As the beer moves across my palate and the flavors develop, I start to pick up some of the barrel character, a little bourbon. vanilla, and more cocoa. The finish is bittersweet and lingering with notes of sarsaparilla and vanilla. This beer is not over-the-top and you can tell you're drinking a good, solid porter (with a little extra love included).

Delicious beer and one of the best porters I've had. Dangerously gulpable. I bought one 4-pack at an excellent price of 10 bucks. Wish I'd bought more. Much more. GI - please bring this one back!

12 ounce bottle into a snifter. Bottled 9/11/17, had 11/5/17.

Pours an opaque, dark brown, with a one inch foamy head and soapy lacing. Aromas of bourbon, malt, smoke, oak, chocolate, cocoa, light coffee. The taste is malt, chocolate, some vanilla and caramel, oak, less bourbon- light overall, and smoke than the nose. Smooth, appropriately carbonated, pretty light bodied for the style.

Nicely done, but nothing special or unique. Lacks intensity overall, particularly the flavor.

Very well balanced, smooth and highly drinkable. Bourbon noticeable but not overpowering. Some cocoa, vanilla, and coconut notes. 3-6 more months in the barrel would make this outstanding. Overall very good bba porter.

12 oz serving tasted in a snifter from draft at The Vine on December 9, 2017. Look is deep brown with a thick tan head and lingering lacing. Smell taste is chocolate, dark roast, oak, bourbon and spice. Feel is medium in body.

Pours dark brown-red with head the width of a pencil which dissipated fairly quickly. Really pleasant beer with a sweet brown sugar, chocolate, and laid back bourbon flavor that is perfect. May have to pick up another four to enjoy over the next months.

Pours very black with a nice kakhi foamy head, almost like a nitro Guinness pour. Aroma is mainly English yeast with faint chocolate. Very flavorful - loads of bittersweet chocolate, a surprising amount of barrel presence considering it was barreled for only 3 months, lingering vanilla finish, a touch yeasty. Fantastic creamy mouthfeel, excellent carbonation. Overall I am very impressed by this beer - my expectations were low because the first 2 iterations were not to my liking. Very drinkable. Abv is well hidden.
