Notes: At the heart of each Bourbon County are the wood characteristics we thoughtfully amplify. This year, we took wood complexities to another level by doing something we’ve never done before: we took fully-matured Bourbon County Stout and finished it with toasted fruitwood—specifically, honeycomb-shaped cherry wood chips. The versatility of the cherry wood and honeycomb shape allowed for maximum flavor extraction, revealing complex characteristics like red fruit, ripe cherry, and light toffee, which are not found in the original oak barrel itself. The result is an amazing elevation and a notable difference from our Original Bourbon County Stout.⁠⁠

Deep mahogany with a 1/4" tan head, which dissipates. Moderate lacing.

Aroma of molasses, figs, dates, caramel, roast malt.

Taste is molasses, figs, dates, caramel, a cherry sweetness, roast malt.

Full body, thick & rich, light carbonation. Sweet, caramelly finish.

Another outstanding Bourbon County Stout.

L - Pitch black with mahogany highlights around the edges with a tan head that dissipates quickly leaving behind no lacing
S - A solid amount of oak and dark fruits - cherries and other berries - toffee, caramel, and molasses in the background with some hints of chocolate
T - Honestly, I'm not picking up that much of a difference from the original 2021 BCBS except for the backend notes of fruited oak with hints of cherries and other berries. Overall flavor profile starts off with rich chocolate - almost fudge like - and dark malts intermixed with dark berries - cherry sticks out - along with molasses, toffee, hints of caramel, and light notes of sweet bourbon. The big differentiation between Cherry Wood Stout and the Original is the back end- the back end of the Cherry Wood has finishing notes of dark cherries and oak that's pretty prominent on the back end, yet subtle.
F - Full bodied with light carbonation - smooth, silky.
O - This is, yet another, fantastic stout from Goose Island. It's not as different as I had hoped from this year's 2021 Original BCBS but it does has subtle differences, specifically the woodiness on the back end

On draft. Poured out an opaque, jet-black color with a small, light brown head of bubbly foam. It left sudsy rings of lace on the glass. It smelled of chocolate, toffee, bourbon, vanilla, oak, cherry and toasted caramel. Great bourbon, oak, vanilla and cherry flavors with dark chocolate and toffee.

Very dark brown/almost black appearance. No head.
Aroma of bourbon, chocolate, light cherry, wood.
Taste follows the nose.
Very nice beer!

I liked this one, which hasn't been the case with a couple of this year's BCBS offerings. Their was a nice oak flavor to this and of course a touch of cherry. The cherry was noticeable earliest he teste but it was subtle and di not overpower the other flavors. Typical BCBS mouthfeel.

A - Dark brown with a slight cherry hue around the edges, no lacing.

S - Chocolate char, some light Bourbon, and cherry.

T - Cherry, Roasted cocoa, light woodiness, Bourbon, some toasted caramel. Finished balanced across the board with all the flavors and oak.

M - Big body and silky smooth.

O - This is pretty fantastic. Recommended.

Picked up a pint bottle from TW Greenville, SC 11-27-21 for $18.99. Drink by 26AUG26; consumed 1-10-22.

Beer poured black with a minimal tan head that dissipated quickly.

Nose is very nice, classic BCBS with big malts, bourbon, vanilla, and leather.

Taste is a huge malt base that is medium roasted. Bourbon barrel aging gives notes of bourbon and leather, with a touch of vanilla and the alcohol warming i am looking for on a cold windy 40 degree day. Finishes with a sweet cherry that is stronger than expected.

Mouthfeel is awesome! Full bodied and so very smooth and satisfying with every sip.

Overall a very nice BCBS variant! Given how cherry forward this is fresh i am thinking my second bottle should rest for a year to see if the cherry blends in and is more complimentary.

2021 release 25oz bottle EB date 29 Aug 2026 into a large snifter per reverse label recommendation.
L: Pours black with a 3/4" khaki head that is short-lived down to edge foam. No visible carbonation and almost no lacing.
S: Bourbon, vanilla, cherry wood, molasses, cocoa, light tannins. Bourbon is firm at first, mellows after approx 20 min.
T: Sweet dark caramel, bourbon, cherry wood, vanilla, oak tannins, toasted malts, bitter dark chocolate over syrupy cherry fruit, light char, fudge, toffee, prunes. Suggestions of smoked oak tannins linger. Dark chocolate becomes more prevalent as the beer warms. A nuance of tartness at the extreme end of it's lingering finish.
F: Smooth, velvety & mildly creamy full bodied semi-heavy mouthfeel with a moderately long finish. Deep, wide and indefinitely broad.
O: A masterfully & expertly brewed/aged BBA Stout that yields open & shut dignified tastes and feels which can be enjoyed chilled or at cellared temps. I personally found it to be outstanding between 57F to 60F. The cherry wood compliments the grand sweetness and casky flavors & aromas. It is remarkably easy drinking, and world-class in it's style.

A: dark black in cookie with a carry dark brown head.

S: super sweet, with vanilla, caramel, cherry and oak.

T: brown sugar, oak, and vanilla. A touch of wood especially in the finish and a closing note of coffee.

M: truck in body with a nice creaminess.

O: overall a big boozy beer.

Pours dark brown/black with almost no head. Aroma is woody, cherry and roasted notes. Taste follows with cherry, roasty, woody notes. Good balance, complex and evolving flavor. Feel is good, in line with style and lingering finish. Overall, it shouldn't be this easy to drink 14.2%, but it so is.

Note: no actual cherries in this beer, but wood from a cherry tree. I wonder if the cherry taste reviewers report are real or subliminal. One review even described this as a fruit beer. A fruit beer without any actual fruit?

Same classic BCBS look: Deep black topped by a short tan-khaki head with short retention, receding to a thin ring, bubble island, and then nothing. Slight lacing if I tip the glass while the head / ring are still present. Pretty much no lacing once the ring disappears.

Aroma is strong: bourbon and wood, both vying for which is more to the front. Some fruitiness in the background.

The taste is different. It'll take me a few sips to try to parse it out. Bourbon is there, and the woodiness is quite prominent. The initial taste is a bit harsh, but this quickly transitions to a smooth sweetness, ending with a transition back toward dry (ish - by comparison; it's not actually a dry beer).

The woodiness of this one sets it clearly apart from the base beer, no doubt due (as mentioned earlier in this thread) to the greater surface area of wood in contact with the beer. I don't get much fruit in the flavor, though. If I try hard enough, I can perhaps detect it, but it is in the background. *I* certainly would not describe this as a fruit beer, and but for the name, fruit may not have been mentioned in my review at all beyond some vague description like "dark fruit", which is present in many Imperial stouts. Hardly any noticeable alcohol warmth, certainly no burn.

The mouth feel is thick, but not as viscous thick as the classic BCBS, ending a bit sticky.

Overall, this is high on my list of the variants of years past. IOW, I am really enjoying this one. The only other variant I have bought is Fourteen. I'll save that one for tomorrow. I still haven't decided if I'm going to try to track down the coke version.

PS: after some time has passed, as I'm continuing to sip my way to the bottom of the glass, the beer does seem to be finishing drier than it did initially.

This is definitely equally as enjoyable but I don't find it tremendously different than the original, dark fruit is 100% more pronounced here but it being dark cherry more than raisin doesn't set it apart as much to me. Still in my very first run of any of these im actually really impressed. If these really used to be better like holy shit.

Smooth, full-bodied and full of that dark fruit character, very dark prunes and raisins, blueberries - plenty of underlying fudge brownie and a present, almost oaky vanilla/caramel character with some dark char as well, caramelly boozy liqueur. Mild earthy smoke. Pretty nice, not sure it’s worth more $$ than the regular version this year but it is very good.
