First off, big thanks to Caleb and Upland for sharing this experimental first batch with us at BeerFX Beyond the Brew: Sours. He said this was their first trial with using this local fruit, and he bottled some up for us to give feedback. The pawpaw is a North American fruit that is comparable to a banana with additional tropical fruit notes. It has limited availability and shelf life. The base lambic really shines. It is bright yellow with loads of tartness on the nose. Maybe some light citrus notes as well. The base lambic is blended very well. This beer is quite tart, but not acidic. I've never had this fruit, but it blends very well with the base beer. There is some tropical fruitiness and maybe unripened banana at the very back end and in the finish when you pause between drinks. Really interesting beer, that I'd say was definitely a success.
