Notes: Follow our journey as we flavor it out towards the perfect Stout. Step by step, beer by beer, on and on. Forever! This is Fudge. A big imperial stout brewed with vanilla and cocoa to really pack that fudge-punch. Candy!

Fudge is one of two inaugural stouts brewed for us at Dugges under the Twelve Percent beer project in the USA. For this first trip over we did not mean to brew stouts. We were supposed to brew IPAs. But, since the government at the time was shut down, with no-one there to approve our labels and you don’t want IPAs to sit, we quickly had to come up with another idea. Basing the beers on a grand neo-classic Dugges recipe and then giving them American flavors was that idea. Enjoy!

A: Pours an opaque yet still clear thick viscous jet black in color with moderate amounts of fine active visible carbonation rising slowly along the edges of the glass and a faint amount of chestnut brown + dark cola brown + garnet red colored highlights. The beer has a three finger tall dense foamy dark mocha colored head that slowly reduces to a couple of medium sized patches of medium thick film surrounded by a large patch of slightly mottled very thin film covering the remainder of the surface of the beer and a medium thick ring at the edges of the glass. Significant amounts of lacing are observed.

S: Moderate to strong aromas of roasted + chocolate + caramel + dark malts with moderate amounts of lactose sweetness. Strong aromas of chocolate with just shy of moderate aromas of vanilla + cocoa + baker's chocolate + molasses.

T: Upfront there are slightly stronger than moderate flavors of roasted + chocolate + caramel + dark malts with moderate amounts of lactose sweetness. That is followed by strong flavors of milk + dark chocolate along with moderate flavors of cocoa + baker's chocolate. Then there are some light to moderate flavors of vanilla and molasses. Finally there is a very light presence of earthy hops which impart a very light amount of bitterness which fades away fairly quickly leaving lingering fudginess.

M: Full bodied with moderate amounts of carbonation. Chewy and thick, a touch sticky.

O: Drinks very easily considering the strength and a wonderfully full chewy mouthfeel. Very enjoyable with not quite as much sweetness as I expected - it is well balanced between the not very noticeable hops and the sweetness from the malts + chocolate + lactose. Excellent.

I had the opportunity to try this beer on tap at All In Beerfest in november 2019 and I liked it!
Now this beer has been released i a bottle at Systembolaget, Sweden.

Very dark brown to black beer with a fizzy, mocha-head that dissapears fast (15 seconds) and leaves no lacing on the glass.
Nose: Wow! This IS fudge! Vanilla, caramel, milk chocolate, cookie dough and molasses.
Taste: Sweet but not overwhelming. Caramel, fudge, vanilla, dark chocolate, cocoa, marshmallow, nuts and fudge.
Mouth: Medium body and carbonation. Smooth and creamy. Sweet ending.

Appearance - dark brown body with tan head

Smell - vanilla, bakers chocolate, cocoa, chocolate

Taste - vanilla, chocolate, cocoa, marshmallow,

Mouthfeel - medium plus bodied, medium carbonation, sweetness upfront from vanilla, fudge, marshmallow in the finish

Overall - good stout here with nice flavors, worth a shot - tastes like a liquid candy bar

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing opaque in the glass with a thin brown head that dissipates to patches with nice lacing. Aroma of dark toasted malt, cocoa, vanilla and nuts, it truly is spot-on fudge! Flavor follows, with cocoa, vanilla, nuts, dark and bready malt with a little toffee. Medium bodied with light creaminess. We are living in the age of dessert stouts and many have remarkable faithfulness to their target. This is definitely one of those. I think the aroma could fool me in a blind sniff between this and actual fudge. The flavor has a bit more malt character and a suggestion of the mostly well-covered ABV, but the dominant character is nutty fudge. Nicely done! I liked Idjit!, the last stout I had from Dugges and I really like this one too.

Just had their Coffee imperial stout -featuring coffee and cocoa - a coupla days ago - in that one, the chocolate flavor was more striking than the coffee, and here, in this beer featuring cocoa and vanilla, I'm finding that the vanilla is big across the palate, too... Lots of chocolate candy-like impressions here, fudgy, sweet, chocolaty, smooth, and rich - but all o' that with a big vanilla flavor , ranging from the sweet to the sharply alcoholic stuff... Really digging it...

16 ounce can into snifter; no can dating, but was just released. Pours dense opaque dark brown/black color with a 2 finger dense and creamy khaki head with amazing retention, that reduces to a large cap that lasts. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Amazing appearance. Aromas of big milk/dark chocolate, cocoa, coffee, caramel, vanilla, cream, toffee, brown sugar, roasted nuts, fudge, toasted biscuit, spicy rye, and dark/brown bread/crust; with lighter notes of molasses, licorice, raisin, prune, fig, date, smoke, charcoal, leather, tobacco, wood, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness. Slight booze in the aromas as it warms, but not overwhelming. Damn nice aromas with great balance and complexity of dark/roast/rye/bready malts, cocoa, vanilla, and light-moderate fruity yeast/earthy hop notes; with great strength. Taste of huge milk/dark chocolate, cocoa, coffee, caramel, vanilla, cream, toffee, brown sugar, roasted nuts, fudge, toasted biscuit, spicy rye, and dark/brown bread/crust; with lighter notes of molasses, licorice, raisin, prune, fig, date, smoke, charcoal, leather, tobacco, wood, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness. Light pine, herbal, grassy, woody, peppery hop; and roast/charcoal bitterness on the finish. Lingering notes of milk/dark chocolate, cocoa, coffee, caramel, vanilla, cream, toffee, brown sugar, roasted nuts, fudge, toasted biscuit, spicy rye, dark/brown bread/crust, molasses, licorice, dark fruit, smoke, charcoal, leather, tobacco, wood, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness on the finish for a while. Amazing complexity, robustness, and balance of dark/roast/rye/bready malts, cocoa, vanilla, and light-moderate fruity yeast/earthy hop flavors; with an awesome roast/hop bitter/sweet balance; and no cloying, acrid, astringent flavors after the finish. Lightly increasing dryness from lingering hop/char bitterness. Medium carbonation and full body; with a very smooth, creamy/silky/velvety/bready, and fairly sticky/chalky mouthfeel that is fantastic. Mild increasing warmth of 12%, with no booziness lingering after the finish. Overall this is an amazing flavored dessert imperial stout! All around incredible complexity, robustness, and balance of dark/roast/rye/bready malts, cocoa, vanilla, and light-moderate fruity yeast/earthy hop flavors; very smooth and dangerously easy to sip on for the huge ABV, with the mellowly bitter/drying finish. Nicely soft feel, not overly bitter/charred. Insanely rich rye/oats/malt complexity, with cocoa/vanilla flavors; great earthy hop presence/balance against sweetness, and restrained fruity yeast notes. A highly amazing offering, and top tier style example. Perfectly balanced between all flavors.
