Poured clear golden color with an average frothy white head that lasted with good lacing. Moderate to heavy complex sweet fruit and yeasty aroma. Medium body with a smooth dry texture and soft carbonation. Medium to heavy sweet fruit flavor with a medium sweet finish of moderate to long duration. This is a very good beer.

A: Poured into my snifter with minimal head but a great looking honey/unfiltered orange/yellow.
S: Emits a lot of spicy notes up front along with some sweet fruit after sitting a bit. However the overwhelming smell I get, even above the malt is a bitter almost vinous wine like scent. It's not pleasant to me.
T: No too bad. But not what I am used to with a Tripel. Not enough of the candied spice and fruits and for me, too much of the oak barrel/whiskey and wine flavor. I like this flavor, just not with my Tripel. As it warms, it does produce a spicier flavor.
M: Medium to low carbonation after warming, sticky.
D: It's quite flavorful, just not my type of flavors. The bitter/wine/whiskey aftertaste is what I am stuck with, so one will do just fine for me.

Pours a a murky-mysterious tone of apple juice with a nice thick whipped topping of head.
Smell immediately hits the nose with almost a tangerine fruit with a sticky spiced note-maybe some kind of lemon zest.
Taste is very sweet and zesty in the front, loaded with a tart-sweet malt ending.
Finish is the best part-a long lasting desert wine finish wet with a winey thick sweet presence.
Drinks very well, solid through the front and middle- may turn some away with the wine finish and tart character.

Appearance - a hazy dulled orangey straw color. Thin cover but managing a partial cover and solid cover.

Aroma - a grainy, slightly twangy malt, but an unmistakeable vinous, slightly whiskey-like smell. Part beer, part wine, part whiskey! A spicy, almost peppery nose at times.

Taste - a light grain start but it has a robust element too. The oak wine barrels are immediately evident (Chardonnay perhaps?) and push this more into wine territory than beer. Excellent flavor though. Not real grapey or anything but the toasted oak is superb. A light but vinous finish. Also, a light toasty, oaky finish. The abv is pretty much non-evident but I do pick up a throaty, belly warmth along the way.

Mouthfeel - pretty even here, some vinous slickness maybe, moderately carbonated.

Drinkability - this doesn't really come across as a tripel per se. I don't pick up the candi sugar component I expect, and the head is pretty conservative. Despite, this is easily one of Mike's finest craft creations at Mt. Carmel Brewing and should be considered as a seasonal to be added, perhaps varying the barrels year to year (hint, hint). ;-)

The beer was chilled and served in my Ommegang chalice.

Appearance: The body of the beer is a honey coloration. Very clear tiny bubbles dance to the top of my beer. The head is a thin creamy biege coloration.

Smell: The aroma of the beer greats my nose with an orchard of apples and pears. The fruit couples well with a sweet candied vanilla, perhaps thats the wine barrel. Alcohol is present and accounted for in the aroma and is well incorporated.

Taste: The beer has good interplay between sweet maltyness, oak vanilla, and tart flavors. Tart apple / pear cider lead the flavor alcohol hits and warms the mouth nice peppery spices at the end notes. Well done!

Mouthfeel / Drinkability: The body of the beer is medium. The carbonation levels are on the low side but works really well with the beer. Alcohol is noticeable only as a warming. The beer is a bit sweeter than I would have liked but its not bad by any stretch.

From notes 1-26-10

Eye: Very clear body with golden hues and orange highlights. Head is bone white and has a creamy velvety texture. Retention is like to that of a thick blanket. Looks excellent, a larger head would benefit, but it still looks nice.

Nose: Huge citrus notes, the barrel has really brought some interesting aromas to this beer. Tons of madarin orange, cumquat, and tangerine aromas. Alcohol is evident. Spicy phenols from yeast, maybe some peppery notes. Interesting to say, and a very potent aroma at that...smells real nice. Not really much more than that.

Tongue: Again, that huge citrusy-orange family flavor is here, just as it was in the aroma. Flavor is long lasting. Dry finish is accented by the white oak of the barrel. The barrel comes out real strong, white oak character is unmistakable and is extremely easy to detect. Spiciness from yeast comes through as well. Alcohol is also evident...it helps, along with the spicy notes from yeast, give some balance to the strong fuirtiness and sweet malt charcter of the beer. Definitely a lot going on in this beer, much more than can be described from the drinking of one beer, more and more will come out after having this beer multiple times I can imagine. This is a good beer based on the fact that its interesting, I'd not put it up with the best tripels I've ever had, its good because its different and interesting, but as far as stylisically goes its above average, and good, but nothing spectacular....stylistically speaking. On the other hand, this beer is very good cause its so interesting.

Feel and Drinkability: Body is light and finish is dry. Carbonation is fine and a bit calmer than I would have expected for the style. Maybe just a bit higher and it'd give it just an extra boost of livliness...not to say that its not good the way it is...it just might make it a little more interesing as far as feel goes. This is very easy to drink and I can see myself getting another one of these brews. The Dolce wine barrel this was aged in has given some real depth and unique characteristics to this brew.

Review is from notes taken on 2/3/2010 and poured from the bottle to a tulip.

Appearance: Pour is a peachy color with a solid coppery core; starts with a one finger white head that has very little retention and fades almost immediately to a full and uneven skim; body is quite cloudy and shows a lot of slo wmoving carbonation; spotty and oily lacing holds loosely to the sides of the glass.

Smell: A very strong, tart fruitiness that is acidic (apples and pears); a candied sugary maltiness supports that fruitiness -- nose is quite potent.

Taste: Pretty solid, actually; a lot of those acidic and tart fruit flavors start out dominating, but are quickly followed and supported by that candied sugar malty backing; definite presence of alcohol towards the end and a thin woody and vanilla-esque flavor trails in the back as it warms; there's a light spiciness as it warms as well.

Mouthfeel: Carbonation is very full and strong; body is crisp and fairly light in weight; has a fairly dry finish and the belly is left feeling quite warm.

Drinkability: Not too shabby overall -- nice robust smells and the sweet flavors and lighter body would make for a great dessert; I would stop with one though as I feel the sweetness may become a bit much after that and kind of turn the stomach.

This is the second of the special releases from Mt. Carmel and Party Source. From the bottle: "This Belgian tripel-style beer was aged in a barrel of French toasted white oak, from a winery in Napa Valley, California. The barrel was used to age dessert wine." Only 382 bottles were produced.

A- Extremely clear orange-ish brown with barely any head. A ring stays around the glass for about 10 minutes but recedes back into the beer.

S- Spicy Belgian yeast fills the nostrils right away. It's spicy with a hint of citrus, especially orange. Maybe a hint of oak. It's a nice clean smell with a bit of alcohol as it warms.

T- I'm not well-versed in the Belgian styles but I can tell that a Belgian-style yeast is used here with the spicy/fruity character. The finish is a bit wine-like which makes sense due to the barrel this was aged in. This is a little sweeter than I was expecting. The alcohol isn't very noticeable but there's a bit of a bite in the backend.

M- The carbonation feels about right. The lingering mouthfeel left after this beer goes down the throat reminds me a lot of wine. Not really a good thing in my book.

D- I don't think I could drink more than one of these at a time. It's pretty sweet and reminds me too much of wine with Belgian yeast, and unfortunately I'm not a big fan of wine.
