Midwest Style IPA's tend to have more malt flavor and sweetness than the drier East Coast IPA's, but less hop bitterness than West Coast offerings. The hop flavor and aroma are in abundance and usually favor the old school hop varieties such as the C-hops; Cascade, Centennial, and Chinook. The yeast is most often a clean American variety or an English strain that's not too fruity.

Sampled in a 4 ounce glass while at the brewery/restaurant on May 31st, 2014 while in Topeka, Kansas for the weekend. Made some notes while sampling. Alcohol content is 7.2% (ABV) and 48 IBU's.
Served at the table so I didn't see the actual pour. The color is amber and darker than many IPA's. A small head was seen with some spotty lacing. The aroma is LOTS of different hops as to be excepted. The taste is the same with a slight nutty finish that is bitter from the hops. Not a fan of IPA's due to the extra hoppy bitter finish.

A - Pours amber for an IPA. Very little head leaves room for improvement
S - Strong hop bouquet.
T - Nice balance from the malt to mix with the hops. Floral with some nuttiness. Some sweetness.
M - Mouthfeel is great. Good carbonation and smooth drinkability
D - Very drinkable IPA. Good balance with malts.
O - Nice solid, balanced IPA. Very drinkable. Not a super interesting IPA.

Pours a clear light amber color with a small head that leaves a lot of lacing behind. Smells is of pungent hops with earthiness and some onions. Taste starts with some caramel malts that give way to a lot of grapefruit and earthy flavors. Really nice hop profile. Mouthfeel is super creamy and smooth, almost cask like. Overall, this is a pretty solid IPA. Hoppy as an IPA should be - not as balanced as others I have had but it worked for me.

A. Pours a bright, golden-orange color that catches the light. Reasonably clean looking with just the slightest haze. Not overly carbonated, but there is a small off-white head.
S. The aroma is resiny-pine and toffee. the hops seem to be cascade and something else that I cannot place. No noticeable yeast aromas in the nose.
T. Grassy and dry pine hop taste up front, sweet caramel malt character through the middle, and sharp hop bitterness in the finish.
M. Medium mouthfeel with little carbonation. There is an astringent quality in the middle that almost accentuates the bitterness of the hops.
D. Very drinkable, not overwhelmingly delicious but quite solid nonetheless.
A big thanks to my sister who despite being a starving college student, always manages to bring home something delicious from Blind Tiger.
