750ml 25.4 Oz. bottle. Poured into my Duvel Tulip.
Appearance: Frothy rich head ends up with a nice 1/2" in depth. Good lacing but not as rich as other Tripels.
Smell: Really complex nose, flowery hops, citrus, alcohol, spice, maybe even some honey.
Taste: Another solid example of the style, rich, sweet up front, nice balance with hoppy bitterness at the finish. All of the notes from the smell are there, very well executed.
Drinkability: The Belgian Tripels are smooth and creamy, nice but I notice the alcohol in the flavor (more than the Kasteel at 11%).
Yet another solid Belgian Tripel! If you plan on touring the Tripels include this stop on the ride.

Not much of a pop when uncorked, not much of a head, the cork smells pretty, aroma & taste are pretty much the same: grain & honey. Those 2notes are pretty much it, even hiding its 9%. Tastes like a sweetened breakfast cereal. Feels almost flat, very little carbonation. I expected a little more but still very good

I'm not going to review this beer. But I will tell you that MJ's review of the brewery and its female brewmaster (a brewster) is a master-stroke of understated humor.
MJ's "Great Beers" called this Tripel "especially seductive... it has a wheat crispness and a lively interplay of hop and coriander."

Urthel's Hibernus... is a fairly malt and ethanol-heavy beer, and I agree with others that have suggested this comes across more like a Belgian Strong Pale Ale than a tripel. The beer does not contain certain flavors I've come to expect in a tripel: it's a bit heavy in terms of malt, but not remarkably complex in flavor as it is missing the bright sweetness, complex Belgian yeast and floral hop qualities. Combined with the $4.30 price of a 11.2oz bottle, I do not expect to pick this up again.
Pours a 1.5cm tall head of slightly off-white foam, made up of small-sized bubbles yielding a frothy appearance. Retention is below average at about 30 seconds, the foam fading to a very thin ring around the perimeter of the glass. Lacing is good, with many small dots clinging to the glass' walls. Beer is a dark golden orange color, with light bringing out paler orange-yellow hues. Carbonation is visible through the slightly opaque (20-30% opacity) body, low in number and activity.
Aroma is pleasantly fruity with a bit of pineapple, apple, and pear, these joined to sweet malt and light caramel syrup, honey, and peppery ethanol.
Very little Belgian yeast phenolics, mustiness, or "funk," instead Urthel's Hibernus is of moderately dark caramel-like sweetness, baked pears, light honey, and peppery ethanol. Opens on the front of the palate with caramel syrup and honey-like sweetness, baked pears, apples, and ethanol. Mid-palate of fairly heavy malt and caramel syrup sweetness, baked pears, peppery ethanol, slight pineapple. Back of palate continues with the caramel syrup and honey sweetness atop the baked apples and pears with peppery ethanol. Aftertaste of caramel and honey sweeteness with baked pears and apples.
Beer is medium to medium-light in body, surprisingly, with carbonation that is medium to medium-high in intensity, resulting in a beer that is at first fizzy, then fading to foamy (9/10) and smooth (1/10). A bit overcabonated, in a style that is already known for being highly so. Ethanol easily felt as heat in the nostrils and as a gentle burn on the tongue and back of throat. Closes dry, with moderate stickiness clinging to the palate.
