Up to twelve months of aging in California white oak barrels gives this beer a complex nose with honey-like flower , vanilla , apricot and leather by adding wild yeast. Full mouthfeel from ample and generous amount of American hops.

I was concerned that I wasn't going to like this when I first cracked it as it was all horse blanket and BO. But that quickly mixed with the fruit and acidity.

When I tasted it I was pleasantly surprised by the wonderful grape and apple mixed with Brett and tannins and the dry finish.

i wanted more from this one. at something near 30 bucks a bottle in the denver market, this just should be way better than it is, and for your money, i would go elsewhere. that said, this is one of my favorite unsung breweries in the world, and i bet the bottles are better than my draft experience at the side project cellar in saint louis, where the beer was a little lazy looking after the initial pour, generic in its oak and wild elements, and sort of understated to a fault, as much as i like subtle wild ale, it just didnt get there for me all the way, close as it was. malty for the style, i felt like this had a little more to it on that side, but its generic, light crystal and not much of a contributor to anything unique. its for sure oaky and winey, but it doesnt sing for me, and its a lot like a million other beers. so much of the beer from these guys is stand alone, like, nothing else tastes or feels or is anything like it at all, yet this one, one of their more regarded, pricey, and fancy beers seems to be so lackluster. a honey and hop finish, funk and tang, but not special or different like i wanted it to be. i feel like this beer still owes me something and it might never pay, its not frustration, just some mild disappointment, good as it is, almost like raising a kid, if i could imagine what that would be like when they acted out in a minor way... not at all worth the bottle price, unless that format is way different...
