Notes: A bourbon barrel-aged version of our Imperial Stout Old Viscosity

Enormously rich but satisfying beer, Older Viscosity is 100% straight Bourbon barrel-aged for a minimum of 9 months, taking full advantage of our Oak Aging program, adding levels of complexity and depth. The beer starts off with a coating of rich malts and dark chocolate and finishes in a dry bittersweet ending balanced by a firm bitter tone and warming notes from the alcohol. Available in 375 ml cork finished bottles

Bottle - Wow!!! This is just a great beer that is worth the money. Lots of bourbon in the nose. The taste is so smooth. It was hard taking my time drinking it, because I really didn’t want to stop. My only issue was that it didn’t coat my glass like I thought a beer called older viscosity would do. But you would be an idiot to pass this beer because of that.

2014 Vintage

A: Poured into a snifter to a deep and viscous black topped by a finger of dense dark tan head that fades slowly to a small collar around the edge of the glass
S: Smells of roasted malts, chocolate, coffee and bourbon barrel influence with some caramel and vanilla
T: Taste is caramel and vanilla with some roasted malts, coffee and chocolate as well as a little oak and charred wood. Swallow is more caramel and vanilla barrel influence with some more roasted malt and coffee.
M: This is a big beer with a full mouthfeel and soft carbonation. The beer has a dry finish from the ABV.
O: This beer is top notch. It has great flavors and complexity and drinks pretty well for the ABV. It isn't the greatest BA stout but it's up there. Definitely one to try if you like BA stouts.

If you're into big ol' boozy imperial stouts, this has what you're looking for. Loads of sweet on the nose and brutally intense malt boldness. I'd like to get another one of these to age.

Purchased a 375ml bottle from the brewery last summer for about $15. Just now drinking it after about a year in the bottle. Pours jet black as advertise with little carbonation.
Smell is slightly sweet and chocolatey with alcohol prevalent. Taste is very malty with some coffee and chocolate. Goes down fairly easy for such high ABV but aftertaste has a bit of a burn. Not as heavy or full flavoured as I thought it would be. More of a roasted malt bomb of stout. Not syrupy like some BB stouts with decent feel and body. Overall a huge disappointment for such a rare, expensive beer.

Had this on my want list for a while. Poured from bottle into glass.

Dark black pour, with a nice half-finger brown head.

Lots of chocolate and oak from the barrels. Roasted coffee beans come through

Taste goes along well with the nose. This tastes great! Loads of chocolate and coffee, with a nice balance of vanilla. The oak really pairs well in this beer.

Medium-heavy body with strong carbonation.

Great beer that I would definitely purchase again.

L: jet black with dark brown around the edges. Big mocha head with solid retention and lacing
S: oak, coffee, chocolate, toffee, dark fruits
T: smooth chocolate, coffee and oak...very nice
F: heavy with above average carbonation for a barrel aged beer
O: awesome beer. Well balanced and complex with a nice combination of the barrel, chocolate, coffee, toffee and dark fruits all blended together. Definitely worth seeing out.

pours a deep black in color with slight mocha head and very little lacing. The usual smells and tastes found in Imperial Stouts: Chocolate, coffee, vanilla and bourbon....ah the delicious bourbon. The alcohol is awesome in this brew. Highly recommended.

Served from 375ml caged bottle at Monk's Cafe into snifter.

Pours a deep brown, with very little head. It settled quickly to just a few specks of lingering foam.

You get hit with the oak and bourbon scents first -- very apparent, but not overpowering like a BCS. Seems very well balanced with some vanilla in the background.

The taste is unbelievable. So incredibly smooth and balanced. Not sure how to characterize it -- its not an over the top stout, but it has some of the qualities. Definitely taking some of the highlights from almost a barleywine -- it's on its own as far as I'm concerned. Lingering taste that makes you wish it would never end. Alcohol is quite well hidden, considering the ABV. Still a sipper for sure though.

Mouthfeel is also one of the better ones I've have. Great viscosity (go figure) and it just seems to coat your tongue and not let go. Not easy to find or cheap -- but this is one that I will go out of my way for any day.

2009 bottle

A: an inky black with hints of brown around the edge, no carbonation or head.

S: like smelling a melted hershey bar.

T: a blast of chocolate that slowly fades to hints of oatmeal/coffee/caramel... reminds me of chocolate chip pancakes!

MF/D: extremely flat but incredibly smooth for how thick it looks, some lasting heat. wish it was capped since the cork lost it its carbonation... barf.

Pours jet black with a fizzy white head. On the nose: Bourbon, vanilla, chocolate, with some coffee and a bit of burnt wood. On the tongue it is hot up front from the bourbon but it gets sweet from the chocolate and vanilla. Bourbon kicks back in at the end. The chocolate coats the tongue and is very nice. This is an incredible Imp stout. The balance between the flavors is awesome, the only problem is the $!! GRR!

Appearance: Black, slight opacity in the pour but pitch black in the glass. A dark brown head forms for all of 60 seconds before fading into a ring. Eventually, even that disappears. This stuff is appropriately named.

Smell: This one's got a massive bourbon barrel aroma of vanilla and caramel, with a touch of butterscotch and roasted malt. There's a a sharp note of alcohol when it's cold, but as it warms and opens up more the oak and bourbon overpower it.

Taste & mouthfeel: It's striking how unlike Old Viscosity this is. The abrasive bitterness and resiny hop attack have been softened by the months in bourbon barrels, replaced with sweet vanilla and caramel flavors. There's still a firm roasty bitterness in the finish, like a piece of charred bread sweetened with blackberry jam, but it never overtakes the bourbon and malt. The mouthfeel is full, almost syrupy, and the low level of carbonation only further contributes to that. As with anything Tomme Arthur puts in a barrel, this is simply stellar stuff.

Wiseman Justin Reporting,

Appearance: Pours a nice head, retention is low, lacing is adequate. I hate rating appearance who cares!? When held to light, edges are amber. (4.0)

Smell: Oak comes through nice and strong, dark fruits, warm alcohol. (4.5)

Taste: Candy Chocolate, like tootsie rolls, some hints of mocha but slight. Woody finish, very likable (4.5)

Mouthfeel: Biting, maybe it's the carbonation? Very smooth when it warms up. It's great, the alcohol is well masked but it has a warming finish. (4.0)

Drinkability: Well, when you factor in price I'm inclined to say it's a (4.0). IT's drinkable, but I've had much more drinkable beers.
