this is what saison should be, its everything i love about a good example of the style, and a very impressive bottle of beer overall. it pours really yellow and clear from the bottle, amazingly light and delicate looking, no sediment at all until a gentle swirl of the bottle releases some creamy haze in the last few ounces. airy rising champagne type of head on it, but it sticks around really well, and just looks sensational in the glass. the nose is awesome too, the yeast first, its incredible. delicate for sure, but interesting as can be, not a strain i am familiar with, a little bready, less belgian than a million others, but with a little floral and fruity aspects to it, and definitely some funk without being bretty at all. i love it. its quite hoppy too, but the strains seem largely unfamiliar, and i just love the way it comes together, very springtime, very appealing. the flavor matches the nose pretty well, the hops are grassy and floral as well, almost has an elderflower character about it, with a hint of soft citrus and even pineapple for a second, but its bone dry and bitter enough on the back end. lighter wheat base, the beer is very light in body but quite expressive. dancing carbonation and a nice lively vibe overall, fresh with the hops, and very old world and professional overall. i havent had a ton of beer from these guys, but this was stunning on the whole, as good as the style gets for me. this is proof all good saison doesnt need brett in it, despite the current trends in the style. incredibly good.
edit: this one isnt ageing super well, still delicious and unique and lively, but the hops are starting to fall off and they add a lightly abrasive bitterness to this now, a little green, and it tastes like the beginning of the end. i have a couple bottles of this left that probably need to be consomed pretty soon. fresh, or within a year or so, seems like the window for this...

Cloudy and golden with slow rising carbonation, and a finger of white head.
Smells of lemon zest, pine, and a solid dankness.
The taste is lemony, citrusy, big and dank and bitter and freshly hopped, green herbs, and some floral notes on the finish which dance briefly on the tongue. Hints of pineapple at moments.
Medium, balanced acidic and bitter tannic, but overall a dry feel. Moderate foamy carbonation.
Excellent hoppy saison by Dunham. Really enjoying this brew Dec 24th in St Jean Port Joli, Quebec.

A: Top of the 750 was very clear but eventually hazed as the sediment was distributed. Heavy, thick sedimentary particles were visible. Creamy two and a half finger head. Amazing lacing and retention. Pale blonde in color.
S: Immediately out of the bottle I could detect citra and tropical smelling hops. Some peppery and citrus aromas come through as well as well as a slight tinge of alcohol as the beer warmed.
T: Perhaps the hops are the most dominant in this beer. They aren't overdone though and it doesn't taste like an IP-saison, if that's a thing. Bitterness is good and backing. Malt is very slightly sweet. Pepper and ester characters come through but take a bit of a back seat to the hops. Citra is the most prominent in the beer and I really don't get the piney flavors of something like Simcoe.
M: Absolutely bone dry, perhaps a bit much even for something like a saison. Carbonation is high but aids the beer in its refreshing quality.
O: Okay but it could have been better. Actual hop flavor wasn't really that close to the aroma. None the less though good beer just not everything I thought it was going to be.

Super fruity with lots going on. Sweet dough, flowers, cinnamon, lemon, orange, vanilla, potpurri, mango, pepper. (4.25)
T:
Dry and evenly hoppy. Black tea, pine, herbs, lemon grass, mineral water bready yeast backbone. (3.75)
M:
Fairly light body that is quite drinkable with a lasting dry finish and a pretty thin feel to it. (3.75)
O:
Excellent Saison.
This has just about everything I like about Saisons pretty well covered.
It looks pretty nice in the glass, but is no Belgian. Aroma-wise it is excellent with really strong aromatic hop notes and strong yeast characteristics mingling perfectly. You can pick everything out but it is very busy. It tastes very contrary to the aroma which is kind of a nice contrast. Very dry and even and dusty-bitter. It is a touch thin for my taste, but that makes it easier to quench your thirst while getting hay for the long European winter. Right?
Will definitely pick this one up again; well worth seeking out. (4)
