After primary fermentation in stainless steel this light golden beer was sent into a quartet of wine barrels historically used for our fruited sour beers. Its base of wheat and Vienna malts provided ample fodder for our resident microflora while aged whole leaf hops offered preservative properties without adding bitterness or hop flavor.

Great balance of sweet, tart, and funky. Plenty of apricot right up front, blanket of funk with hints of barnyard and medicinal phenols, sharp tartness. Balancing bitterness, but no real hop flavor. Trailing funk and apricot finish. Mouthfeel is light and fluffy with a lot of scrubbing carbonation. Bright, drinkable, and wholly enjoyable. Fantastic wild ale.

Opened the cork and cage with quite a pop. It pours a hazy golden with bright soap head that dissipates rather quickly. Stone fruit and some Stilton cheese on the nose. That Stilton funk continues in the flavor. The apricot puree plays the starring role though, in a juicy way. This is a stellar sour.

Great American sour, lots of dimensional funk with a sharp sour note. Clean tasting, some apricots, nice carbonation. Really enjoyed the beer, would drink again and would seek it out.

A Picture of Nectar: I had this beer tonight at the CBC. How can people rate this beer on "Ba" without adding tasting notes? This American Wild beer had all the sour and funk you look for and a nice background of apricot fruit. Hazy. It is no Cantillon Fou' Foune, but still quite nice. Served too cold, but I was glad to let it warm up to see how the flavors evolved. My wife enjoyed it as well...which means I had less to enjoy for myself... A really nice sour beer!
