Red Rock's Elephino (el-uh-fine-oh) Double India Pale Ale is an American style IPA. Its intense citrus, floral and perfume-like, resinous and piney aroma come from the use of a copious amount of American hops. This beer is double dry-hopped on whole leaf Amarillo hops for a vivid, fresh aroma. The huge hop profile is backed up by a malty sweetness that lends a hand in this fine creation's balance.

Pint pounder poured cold into a French brewery pilsner glass.
Kind of an ugly foam skibbles about and recedes.
Nose is brisk; citrusy hops, skunky pine, wet grass, Florida fruits,
Taste follows with a nice malty balancing backbone, very fruity and alive, dry finish with a little sweet note.
Mouthfeel is generously full, and there is medium carbonation.
Overall, a really decent West Coast DIPA. Get it Fresh, bottles, cans, draught where available.

Look - Orange with a tinge of yellow, accompanied by a very slight haze and a modest head.
Smell - Herbaceous citrus, indicative of an IPA.
Taste - A hop-forward profile that strikes a balance, neither too overpowering nor too mild.
Feel - Slightly dry mouthfeel, but well-rounded with full flavor.
Overall - An excellent, distinctly citrusy IPA.

Sent to me by the Utah madman @norsemanone, during NBW BIF #17.
Poured an unfiltered looking amber color with a dense yellow white color head that left good lacing.
I actually smelled a bit of this, which is remarkable in that Covid has been screwing up my nose.
The taste, for a double IPA, American or otherwise, the balance is very good. So good in fact that I would never have guessed that it packed 8% ABV. Light bready malt flavors mingled with the floral yeast flavors and piney hops contained it all in a tasty package.
The feel was just shy of viscous, a smooth, soft swallow with such quaff ability that it was gone before I even started my dinner.
Good beer!

16oz can served in a big snifter. I don't see a date on it. Got it from @NorsemanOne in a trade.

Pours a clear bronze color with a small head, just a light dusting across the surface and a very even ring around the edge. Not much carbonation unless I agitate slightly, and then what I see is very fine and very slow. Smell is mild, flowery green.

Taste is a nice combination of sweet and bitter. Honeysuckle / floral sweetness, strong piney / grapefruit zesty bitterness.

Mouthfeel is moderately thick, slight prickliness from carbonation that apparently I cannot see. Overall, nice west coast DIPA.

Had Elephīno back in 2013 at Red Rock Brewpub, SLC, poured from 16.9-oz. bottle into tumbler, but neglected to review until trying again this week at Cinnabar, Snowbasin Resort, Utah, poured from 16.9-oz. bottle, indecipherable date code near bottom of bottle, into tumbler.

Pours deep gold with clarity, with a huge, creamy, foamy off-white head, with excellent retention, leaving splotchy rings of lace scattered down the glass. Big aroma of resiny pine off pour, then a good bit of (mild) caramel malt, which drop a bit as warms but together carry into mild juicy fruit aromas, including some sweet citrus, mild melon, tart stone fruit and piquant berry. On tasting, begins nicely smooth and creamy, then a nice juicy tropical fruit cameo, before pine resin hop bitterness makes a great, late appearance at the back of your throat, all over a deep caramel malt, leading into a balanced but big bitter and malty yet still fruity finish.

An early Utah high gravity beer, Elephīno is an OG pine-forward West Coast DIPA.

Very herbaceous and nicely bitter. A very unique take on what appears to be a West-Coast-style DIPA. The lingering bitterness makes you want to take another sip as soon as you out your glass down.

Poured from a bottle into a pint glass
Appearance - The beer pots a hazy orange amber color with a one finger head of white foam. The head fades fast leaving just a trace of lace on the sides of the glass.
Smell- The aroma is lighter overall for a double. There is a little bit of tropical fruit as well a touch of pine and earth.
Taste- The taste begins with a bready and lightly tropical fruit taste of pineapple and mango taste. The sweet fades a little bit as the taste advances with more and more grapefruit and some herb coming to the tongue. These tastes last to the the end, and leave one with a nice robust but easygoing taste to linger on the tongue.
Mouthfeel- The body of the brew is moderate with a carbonation level that is normal. A nice sipping brew overall.
Overall -. A nice double with an easy drinking feel!! A nice brew overall.

I was bracing for the usual IIPA frontal hop attack on my buds. Instead I got a sneak attack. These hops refresh to start, then attack in the finish. Looks are actually inviting. Smells offer a nice malt base and lots of fruity hops. Refreshing. Once it gets in my mouth, the bitterness starts and does not relent; but it stays juicy enough so that a malt-head like me doesn't get shy.

My first from Red Rock, I went on their website and was not too surprised to learn they were 25 years old. (Not surprised because Elephino is an unusual beer that does not cut corners as young brewers might be tempted to do.) At 25 years, they have three brewpubs and some high level awards. since they have two Belgians in the 5 most-rated on BA, I almost wished that I'd had the saison... just to see how well Red Rock brews for its food. Next time I'm in SLC !

I'm trying this at Pizza & Noodles in Springdale, UT......just outside Zion National Park. It poured a clear orangish with white head that is leaving some lace. The scent had bitter hop essence with some citrus presence. The taste was nicely balanced with slight citrus bitter finish. The mouthfeel is medium in body with good carbonation. Overall its a good beer.
