Look - Black and thick with a slight tan head and nice lacing
Smell - a ton of barrel and really nice chocolate and vanilla
Taste - a lot of chcolate with vanilla to back it up with a really nice woody caramel char
Feel - Full body with a slight carbonation
Overall - really outstanding beer

12.7 oz bottle, vintage 2020, poured into a snifter at 55-60 degrees F:
L - black as night, with no head
S - vanilla, cocao
T - deep chocolate, bourbon, vanilla, roasted malt
F - very thick with no carbonation
O - amazing flavor, this blend works on every level

Polycephally VII from Jackie O's is a blend on their in house barrel aged stouts and porters. The beer is deep black and has a heavy bourbon backbone. It is conditioned perfectly on the cocoa and vanilla bean as to not overwhelm. You can definitely tell it is a blend of multiple profiles. Nothing too crazy.

Muddy dark mahogany brown to black with a short tan blanket settling to a persistent ring.
Wow. This has a very mature and complex cask profile. It's got a nice bite of heat paired with solid char, date, toffee, and butterscotch wafer from the peppery, tingly stinging barrel. These notes are softened by a mild chocolate roast, a touch of mocha and a modest but luscious accenting vanilla.
The medium-light body is smoothly slick, broken up by a light crackly fizz that comes to a just dry finish but for a touch of stickiness left on the lips.
These Winking Lizard collaborations continue to impress!

These notes are softened by a mild chocolate roast, a touch of mocha and a modest but luscious accenting vanilla.

12.7 ounce bottle, 2020 vintage. Served in a Jackie O's snifter, the beer pours dark brown/black with about a half inch tan head. Head retention is decent, and there's a small amount of lacing. I like the aroma, the brew smells like cocoa, vanilla, bourbon, oak, earthiness and roasted malt. I think the taste is similar to the aroma, with chocolate, vanilla, nutty, caramel, roasted malt, oak, bourbon and raisin flavors. Mostly sweet tasting but not overpoweringly so. Mouthfeel/body is full, it's slick, smooth and syrupy with a moderate amount of carbonation. I thought this was a pretty good brew, definitely worth trying if you come across a bottle or 2!
