This IPA is spiked at bottling with Brettanomyces, a wild yeast that, over time, brings about charmingly unpredictable complexities of spice, funk, acidity and more. The operative words in our beer-cellaring thesis are "over time." For those of you who are impatient or like to experiment, the earliest we recommend sampling this beer is one year before the date on the label. The beer won't be fully carbonated until that date. Ideally, you'll want to cellar the beer up to—or beyond—the Enjoy After date to help it reach its full evolutionary potential. At that point, some facets of the Brett characteristics will have mellowed, while others will have become more profound; it all matures into a fascinating and delicious culmination. Individual results will vary...and that's both the beauty and the intent behind this beer.

750ml bottle into a goblet. Enjoy after 12.24.16 edition.

Looks fantastic in the glass. Hazy glowing golden amber body. Good streams of carbonation. Massive bright white head persists in very good form throughout leaving layers of lacing

Floral nose, bordering on perfume. Very mild funk.

Then the taste. Bitter. Spices. Mild funk. Somehow manages to be mouth watering and refreshing. The floral notes try to break through the lasting bitterness. Incredible complexity.

Mouth full, finish a lasting bitterness.

Overall, the vast difference between the nose and the taste is initially jarring. However, the strong bitterness is not an unpleasant one. And the mild funk and floral notes trying to break through make for a very interesting drinking experience.

Drinking the 10/31/16 version on 2/6/22. I tried another Brett beer before this, a 2015 New Holland Mischievous, and I couldn’t take two sips without pouring it out. I was wrong. Very interesting. Brett presence works well with the IPA characteristics. Maybe I shouldn’t have let it age five years, but experiments are experiments for a reason.

Shared 750 ml corked & caged bottle. Golden colour, large white head. Aroma of fruity hops and brettanomyces / farmhouse. Very nice flavour, brett and American hops galore, yeasty, but still very well balanced.

Poured into a 13 oz thin tulip glass best after 4/20/2017. Pours a very attractive clear straw yellow with a 2 plus finger sticky white head that leaves loads of thin lace, with impressive retention. 4.5

Smell funky must, champagne, smashed grapes, clove, and pear. 3.5

Taste follows musty, smashed grapes, clove, pear, and champagne. 3.5

Mouthfeel is about medium, plenty of prickly carbonation, a tad dry, and at 7% loaded with flavor, but not a necessarily a pleasant flavor. 4

Overall I am grading this knowing I am not a fan at all of this style and I struggle to understand why anyone is or could be. It is still attractive and well crafted, but sorry not my jam...... 3.5

Had one from many years ago. Tart, acidic, and yeasty, though not so much to be off-putting.

Enjoy after 10-31-16. Poured into a pilsner glass.

Look - A hazy golden body with an explosively lively head. I was fighting to keep it under control.

Smell - Sweet and funky, a little bit of lemon meringue pie going on. Also fairly light and easy going, not an overpowering smell at all. Simple for a sour.

Taste - A weird mix of bitter hops and funky sour. Initial taste is a bit of an assault, but the aftertaste mellows a bit. Not as crazy as I'd expect for something that's been sitting around this long, pretty tame and mild.

Feel - All of the carbonation must have escaped in the bubble eruption while pouring. It's sitting at a good level though, medium chewy body that goes down easy.

Overall - Good enough, but nothing crazy. Found it at the liquor store the other day, so who knows how it's been stored all these years. I can get with this, but it's not my favorite.

Appearance: hazy gold. Poured into a snifter. Good head on the beer as expected with the Brett.

Smell: smells like a Belgian. Bread and yeast. Not a lot of IPA going on.

Taste/mouthfeel: full taste, good carbonation. Get a bit of hops with the Belgian taste. Little bit like a Brut IPA. Dry.

Overall: stuck this in the basement for a while and then migrated to the refrigerator where I forgot about it. Pretty happy with the aging. Wish I had more.

Served in a snifter glass from a vintage Enjoy After 04.20.17 bottle.

Appearance: Comes off a semi hazy gold color with medium to full bubbles to the body creating an ultra thick white head rising over a finger's length.

Smell: Heavy yeast and hops. Comes and goes in the nostrils.

Taste: comes off sour right off the bat with doses of hops and malt. calling this in IPA is a little tough considering how heavy the yeast properties are. Think of lemon skin with bread and doses of bitterness.

Mouth: comes off dry and extra bubbly with a full body.

Overall: drinking this beer for the last 20 minutes and I feel like I am drinking kombucha tea with a super dose of alcohol. It is a good beer but personally I would use it as a palate cleanser or starter beer for the night. Always in a glass Salud.

Pours a giant fizzy foamy fluffy head, decent retention, brilliantly clear honey blond color

Nose big Brett, little tart but very funky, farmhouse funk but not horse blanket, mild sweet malt, toasted malts, some grassy floral hops, little spicy fair fruity

Taste big Brett funk, farmhouse and quite cheesy, little barnyard but not quite horse blanket level, nice toasty blond malts, not sweet and fairly dry, grassy spicy floral hops, some fruit too like apple pear, medium bitterness getting spicy late, super super dry finish, with big bitterness and a little yeasty note

Mouth is med bod, tons of effervescent carb a bit too much actually,

Overall great Brett, hops have fade quite a bit, but a solid beer

A - Poured into a Kate the Great tulip a nice crystal clear golden hue with a big fluffy two finger head that fades to leave sticky lacing and a thin blanket.

S - Aromas of really big bright funky brett. Really strong and aromatic. Hops are faded but grassy. Really fragrant.

T - Taste is similar to the nose with loads of funky brett notes. Good crisp grassy notes with a long lingering light almost astringent bitterness. Rather pleasant but incredibly dry.

M - Mouthfeel is nicely carbonated, bright, crisp, clean.

O - Overall this was a very solid wild ale. Great brett notes but super dry.
