We make no apologies for the fact that we love brewing bold, flavorful, hop-centric beers. Naturally, we welcomed the opportunity to work with two amazing craft breweries that share our lupulin-fueled dedication: St. Louis-based 4 Hands Brewing Co., known for its innovative IPAs; and Bale Breaker Brewing Co., whose owners’ family has farmed hops in Washington’s Yakima Valley for generations. Since theirs was the first hop farm to commercially grow the beloved Simcoe variety, using that piney, stone fruit-like hop was a must. Puréed peaches upped the fruit factor, while experimental hops HBC 342 and HBC 344 introduced notes of stone fruit, tropical fruit, berries and citrus to this IPA. Yes, we made another IPA. We concede it’s not surprising, but we are who we are: an unapologetic band of hopheads psyched to explore the ever-expanding IPA universe.

The first thing that jumps out is how ruddy the body is. Actually, no. The FIRST thing that jumps out is the aroma. But we'll get there. Visually, the colour is striking in its ruddy auburn. Incredibly crisp. Small white head of discrete bubbles. Settles off pretty quick.

So now, that aroma. *Homer Simpson drooling noise.* It, uh, smells pretty good. uicy tropical fruits and citrus are augmented by an undeniable sweet juicy peach. some gum spread I suppose.

Several thoughts once I start sipping. I enjoy it. I like a lot of what's going on. It' not always entirely congruous. The alcohol is certainly somewhat pronounced. The components I allude to above begin with apricots and stone fruit. The progression kind of seems to want to go: peach/apricot/stone/plum bitter/citrus/pine, and... it does kind of that. But it feels herky jerky and by the end result it doesn't really feel like all the pieces fit together quite right. This may sound highly critical, but I really do enjoy it overall. Just that there are certainly cracks, and that it can't completely decide what it wants to be.
I can dig a big DIPA that digs for the IBUs, but the punishingly bitter finish just doesn't seem to completely jibe with the juicy sweet front brought about by the peaches. Mixed bag.

Reviewed from (very) long-standing notes. Poured from a 22 oz. bottle into an Upland Brewing pint glass. Consumed on 1/4/16.

A: Hazy gold, with a finger's worth of white head that fades quickly. A good amount of visible carbonation.

S: Citrus, resin, and tropical fruits. There's also a soft, indistinct fruity aroma that I'm guessing is the peaches. Biscuity malt backbone.

T: Resin, citrus rind, and tropical fruit hops. Biscuit malt sweetness, a good bit of hop bitterness with the peach fruity sweetness on top that serves to balance it a little bit. Sweet peaches under the grapefruit hop bitterness through the end.

M: An average DIPA body. Carbonation sensation on the low side. Alcohol presence is noticeable but not too high for style.

O: Decent – the fruit flavors seem nicely natural and blend in with the other flavors present, rather than sticking out of place. But it's still nothing that I'd be in a hurry to repeat.

22oz bottle with my Stone IPA pint glass
Notes from 11/19/15

Clear burnished golden body with some definite fining agents in use here. Sparkles with streaming bubbles in action. The khaki foam head is massive and dense as it settles in for a while and never fully subsiding. Random and tattered looking lace all strewn across the glass. The nose is incredibly fruit forward with lots of peach juice (go figure) and distinct Simcoe hop traits of grapefruit-citrus zest, pine, and dank leafy green notes. I get a bit of honey and caramel malt to the aroma as well as some old spiced alcohol. Fresh green pine and citrus hops seem to really flourish on a wave of sweet peach nectar. There is lots of grapefruit notes with dank herbs and lemony sprigs of pine. Has a moderate to upper amount of peppering bitters reserved by some honey graham cracker like malt. Lightly sticky mouthfeel and some decent drying efforts leading into a crisp finish. Fairly clean in the retreat with some residual lingering hop oils and fruit sugars on the palate.

Far from my favorite hopped offering from a Stone Collab. You basically have a really nice base DIPA with peach juice added. Not sure that one side really promotes the other here but I would consider this as well executed in an attempt at making a Peach IPA.

Bottle to pilsner glass. Gold color, nice white head. Aroma is lemon, pine. Taste is a typical ashy, citrusy ipa; underneath I get some peach, and a woody taste. Feel is a touch flat, but smooth. Good beer, but not great."
