11.2 oz. bottle served cooler than cellar temp. Dark red-brown body with a khaki colored head. Awesome caramel notes in both the smell and the aroma. Also aromatic yeast and a slight alcohol notes as well. Very viscous beer, doesn't come off as syrupy though. High lever of carbonation. Mild bitterness, minimal hop presence. Spices and Belgian yeast pair very nicely. I can't put my finger on what kind of spices are used, but that is a good thing. Notable alcohol content, feeling warm. I have always liked this beer, and it gets way better with age. I found it tastes better as it breaths in the glass a little bit as well.

2010 bottle, poured into an Ommegang flute. Pours a very dark red brown with ruby tints at the edges. Thin, fine light tan head with great retention. Intense aroma of dark and light fruit and fruit esters, sweet malt; slight mineral component. Nicely integrated dark fruit, sweet and caramel malt, cherry juice. Flavors a beautifully melded. Nice dark fruit finish with a hint of hops and a slight alcohol bite. Great carbonation and a creamy heavy body. An excellent quad. Almost too tempting, I just wanted to keep tasting it but had to pace myself because of the ABV.

Appearance-Dark brown bordering on black with a thick tan head that stays fairly constant until the beer warms a bit then some good thick lacing.

Smell-Heavily on the caramel rich malty sweetness with some sweeter spice tones. Some might say cinnamon sugar or maple sugar like aromas.

taste- Follows the nose closely. Very little hop presence this is malty sipper for sure. Dried dark berries, a bit of bitter chocolate, and plenty of spice. Lasting finish.

Mouthfeel- Rich and nicely carbonated. The 10% provides some warmth mid sip and thins the beer out a bit at the swallow. You can feel the booze a bit in this one.

Drinkability- definitely a sipper, ideal for cold or damp evenings.

Overall a high quality quad but a little on the spiced side for my personal taste.

A nicely spiced quad.

Presentation: 33 cl brown capped bottle. Gradient label in orange-burgundy with a framed illustration of a sail boat. Narrative notes ingredients, background, and main characteristics. Shows vintage 2010 and 10% Alc. by Vol. Served in a snifter.

A - Hazy deep dark brown pour, noticeable swirls under a generous frothy ecru head, good retention and surface memory with nice touches of lacing.

S - Pleasing if a bit soft nose initially with a fresh fruity sense and notes of light caramel cream… This was very much served at cellar temp... with time the fruity esters expand a bit more with touches of berries and sugar, but not much more...

T - Sweet fruity salute, prunes, caramel tied to a coated yeasty sense and a De Struise touch before coffee notes emerge… Leading to a complex bitter/hoppy finish. Spicy notes emerge as the brew lingers, pepper and clove with an earthy touch. Some berries before the hops close over the candied malty touches.

M - Medium/full to full body with softly balanced carbonation providing a nice constant tingle… Slight sticky touch under the bitter finish with an emerging boozy dash.

O - Nice long sipper…

Notes: Pretty remarkable and maybe a bit over/hyped… I like it but not to an extreme. And while not bad in any way that De Struise touch I am starting to recognize might not be particularly akin to my palate...

11.2 oz bottle, 2010, poured into a goblet

A- Dark brown/black with a nice two finger tan head.

S- Dark fruits, caramel malts, candied sugar, some alcohol. Great smelling beer!

T- Dark fruits, figs and plums really stand out. Getting dark chocolate and roasted coffee, some yeast. Good balance and complex.

M- Medium to full body, smooth.

O- A nice Quad, really enjoyed it. Good complexity, but not as complex as Reserva or Grand Reserva. Definitely will get this again!
