From a 330 ml bottle (2011 vintage) to a chalice.

A-The beer is dark for the style; it is almost opaque and reminds me of cola. This bottle has a few years on it and 10.5% ABV, so I'm not surprised that the head is a little short. It goes from a thick cap of tan foam to a thin, patchy film in no time. Mostly still in the glass.

S-The aroma is a classic quad mixture of dried fruits like prune and raisin, along with notes of leather, tobacco, wet wood, chicory, and some cocoa powder. It tends toward sweet, but I am not sniffing much alcohol compared to other examples of the style. Very little hops.

T-The taste is a little sweeter than the smell with fewer of the earthy, leather and tobacco notes. Instead, I taste lots of the aforementioned prune and raisin, as well as some cherry, sugar, and a bit of pepper on the finish. Hints of cocoa powder remain too.

M-This beer seems to have held up pretty well for the age. It is a touch on the flat side, but with a little bit of very creamy carbonation left in it. Medium to full body.

O-It has been a while since I have had a De Struise beer, but these guys know what they are doing. This beer may be a little on the sweet side and it lacks the complexity of the best examples of the style, but I would easily drink more.

2013 vintage

All the great quad flavors with n ice oak, bourbon, and vanilla. Plums, raisins, and other dried fruits. Molasses and toffee. Caramel and brown sugar. Bananas and fruits. Very malty. Warming. Smooth.

Medium to full bodied.

Great quad. Complex and flavorful.

St amatus '12 vintage, consumed nov '16

Pours a hazelnut colored beer with a beige, foamy head, which vanishes immediately.

Smells of rock sugar, molasses and melted toffee, amped up by even more sugar.

Has almost no carbonation, drinks very thin apart from its sticky sugar sweetness.

Tastes of cane sugar, bakers chocolate, cardamom and pleasantly dry, leafy hops. Turns sweeter, malt defined during the midpalate with a subtle, spicy bite to it. Finishes watery with a just a malty touch.

Very sweet with a nice spice peak, not much going on apart from that.

S: Vinegar. Toffee.
T: Pear. Plum. Toffee. Moderate sourness. Slightly sweet. Low bitterness.
M: Medium low body. High carbonation.
O: Sour refreshing and balanced.

Dark body and a splattering of tan head
It Smells like a good port
& the flavour is so complex & complimentary
candied peel, liquorice root & Sherry

This beer is pretty much too good for my feeble command of language

This is the best quad I've had
