33cl Bottle: BBD 30 Nov 2014, poured into my 'Forbidden Fruit' chalice on 5th Aug 2013 during a Belgian Beer Evening I had with myself.
Deep amber body: no sediment left the bottle (I think), so it was almost clear in looks with no haze or cloudiness. On top a full and deep head of cream coloured foam.
Intense hop aroma, with a mixed bag of sugared fruit thrown in.
The taste was also hop infested with sweet fruits eating away at the hop flavours, add some caramel and toffee onto the tongue and you are half way there taste wise: interesting brew.
The alcohol is evident but not in a nasty way and the body depth carries it well: I liked this beer.

Pours a slightly cloudy, dark amber, coppery coloration with a medium, fluffy head. Smells of caramel malt and resinous, citrus hops, with notes of grapefruit and pine. Taste is a great balance of caramel malt and bitter, resinous, fruity hops, with citrus notes of grapefruit as well as a strong, quite resinous pine presence and lighter accents of spice, with just a hint of cardamom. Finishes with a medium/strong bitterness and some grapefruit and pine lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
Despite some lightly spicy Belgian yeast accents, which actually add an interesting character to this and go well with the bitter, resinous hops, this feels a lot more like classic, old school West Coast IPA than a Belgian IPA, not that there's anything wrong with that. It's really dominated by a strong resinous pine character, which I love, as well as some zesty citrus, the aforementioned spice and a very solid caramel malt backbone. The claim of 300 IBUs seems highly exaggerated though, or is perhaps proof that the human tongue simply cannot perceive bitterness beyond a certain level. However, I certainly seem to remember having a beer or two that felt more bitter to me and didn't claim 300 IBUs. Overall, this makes for a terrific West Coast IPA with a certain Belgian touch that's big on the bitter, resinous hops, which are balanced very nicely against some sweet caramel malt.

I just found this today in a little cafe just outside of Brugge, I don't know how many they have so I'm not going to reveal it's location! I'm going back :)

T. The extra long maturation in the bottle had mellowed the hop attack but not it's lost all of it's bit. I like to imagine that is what an IPA might have tasted after it's long sea voyage to India. You couldn't feel the hop bitterness at the front of your mouth, it was more a middle of the mouth experience, and the overriding taste that it brought to my mind was Christmas Pudding.
All in all a lovely well attenuated ale which I'll be drinking again on my next visit :)
