Pours a hazed blonde hue with a creamy two finger head and some tight lacing,the smell is sweet bourbon,barnhouse funk,lemon zest and Brett,the mouthfeel is medium bodied,creamy with spritzy carbonation and the tastes start off with sweet bourbon on ice then lemon zest,oak then finished with a funky sourness and overall a rare treat that I'm glad I tried cheers.

Bottle from Etre Gourmet. Served in a tulip, next to the original batch of Struiselensis.

A - White foam settles to a partial cap, collar, and minimal lacework. Slightly hazy but largely transparent golden straw body.

S - Lots of oak that is very dry and spicy; almost dill-like actually. There's a definite vibe of bourbon on the rocks that's been out and the water has melted mixed in there as well. Surprising alcohol character for a 6%. How long was this in barrels? There's virtually none of the base beer present here, just oak and bourbon.

T - Taste is similarly like watered down bourbon with a hefty dose of dry wood as well. Some nebulous peppery Belgian yeast and perhaps a hint of leathery brett, but virtually no sourness. At room temperature there's perhaps the faintest hint of Belgian candi sugar, but again, the base beer is overwhelmed by the bourbon barrel.

M - Medium body, pleasant carbonation, with light lingering acidity. Very dry and oaky, but with a crisp clean finish.

D - This didn't taste anything like the original Struiselensis, and not in a good way. I'd almost be willing to guess this WAS the original batch that was left in a bourbon barrel for the last six years and recently rediscovered. In any case, it's not very appealing. Very disappointed by this recent batch of Struise offerings so far.
