Dated Dec. 2011. Poured into a Newcastle Schooner.

A - A dark orange with a thin gradient to a dark yellow. Big off white head populated by very small bubbles.

S - Toasted malts up front alongside some big hops. Not used to getting so many malts off the nose of an IPA, but hell I am not complaining. Floral notes and citrus compliment the pine.

T - Strong flavor that hits the palette for more reasons than just a strong hop profile. The taste follows the nose, with good harmony, yet too sweet from the malts in my opinion.

M - A fairly large body (call it medium) for an IPA. This reminds me of the body of the 2X IPA from Southern Tier, which just wasn't for me. Balance is here for sure, yet I would not pursue it.

O - A good, well balanced beer for those who seek big malts to compliment some hops. Just not my cup of tea.

A: Honey in color, minimal internal carbonation, pours a very light white head which quickly becomes nice lacing, translucent

S: Moderately fragrant, nice sweetness and citrus, heavy tropical fruits with quite apparent elements of flora and pine with some herbal notes as well

T: Perfectly balanced, sweet and bitter in harmony throughout, flavorful and strong, yet not overpowering, citrus, pine, and tropical fruits abound

M: Very smooth and balanced, refreshing even at its ABV, a bit lingering and light drying but still feels good on the palate, moderate citrus aftertaste

O: A superb example of the style, fragrant, flavorful, and smooth, strong and yet subtle

Lightly chilled bottle into a 12 oz. shaker. Bottling date 12.09.11

Look- Crystal clear medium amber with three fingers of fluffy white head that falls over the course of a minute or so. Not much in the way of lace. Some particulate visible in the bottom of the bottle.

Smell- Very floral, powdery almost, along with grapefruit, honey, and wintergreen. Once the head has fallen, a bit of crackerlike malt makes itself known. Swirling brings out a lemon candy-like sweetness. Surprisingly bright for the age.

Taste- Herbal, resinous, and again the malt comes off like oyster crackers. Starts with mellow spiced baked peaches- clove, nutmeg, not particularly sweet but with something of a powdery fruit character with a sharp edge. Finishes with dark green musky bitterness and white pepper. Light oxidation apparent in the aftertaste. Interesting.

Mouthfeel- Medium body, medium carbonation. Juicy feel, carbonation comes out through the sip and swallow. A bit sticky, a pint or two would be more than enough for me.

Overall- Pretty nice, and good bright hop character considering the age on it. I liked it fresh, and I like it now. Still, I'm not sure it has enough going on to justify keeping it in the fridge for six months. Recommended.
