I've only recently started trying different beers, so please take my review and rating with a grain of salt (based some of it off the styleguide provided: http://www.beeradvocate.com/beer/style/129/)

Context: drank from a 12oz can.

Look: dark/muddy yellow - darker than expected with a foamy head that disappears shortly after pouring.

Smell: sweet with a bit of spice/pepper in the background.

Taste/texture: there was quite a bit of carbonation when I first opened it, but after a little bit, it settled down (haven't finished it just yet, and it's still got some carbonation). I drank this while eating Thai food (after checking beer advocate for food/beer pairings), and it seemed to work well, though food masked the flavor of the beer a bit, so it was a good thing I tried it before I started eating. Colette was crisp and light, which helped contrast with the heavier, stronger flavors of the food. In terms of taste, it's a bit difficult to pinpoint the exact profile, but overall it has a more subtle profile and isn't overwhelming.

Golden yellow in color. White head with tight knit bubbles that fades away to an island of bubbles. Medium lacing. Aroma is pepper spices, yeast, little sweetness and some citrus. Flavor is more citrus with hints of black pepper and sweetness. Really good but a tad sweet.

Pours a hazy yellow, with a medium-thin white foamy head. No lacing left behind for me. Spicy yeast, coriander, banana, and malts form a delightful aroma. Smooth coriander and a slight spicy yeast opens up the flavor profile. Nice malt finish. Sweet, light, and delightful taste. Mouth feel just about right. Very crisp, with a little a carbonated finish. Very subtle and simple aroma and flavor, combined with ease of drinking, makes this a great farmhouse.

Served in a 12oz snifter.

Very much FFF Pear Bear-ish! Tart like a lambic, smells like pears....not very Belgian-like.

One of the better examples of a Saison brewed in the US.
