A very good Saison, very aromatic, recommend getting a one fresh at the Brewery in denver!! Also they named it after my wife!

Since I was recently in Denver (great city with a great future) and I missed going into Great Divide's gastro-pub (my bad, but there are too many options around there on a two day visit), this is Great Divide's review... in a backward sorta way.

Great Divide is enormously accomplished in the British tradition. (Doubt me? Then do the bottle research as I have.) Being so good in a malt-dominated tradition, they fall to temptation and go into a tradition that is yeast-dominated (that is, Belgians, of course.) This is hard for many reasons (half of which I can only speculate about.) But you know what ? Collette makes the jump and succeeds pretty well.

Here is my suggestion to make Collette (or another saison) succeed better. Use some Belgians brewer yeast... or have a Belgian workshop. Or invite some Belgian brewers to collaborate. (It's easy to get them there since Denver is such a great place.) Learn a little. Steal their yeast. Share some profits. And pretty soon the good city where the prairie meets the Rockies is cosmopolitan. At least, that is my advice.

Pours a light gold with a small white head. Smells of Belgian yeast, esters, and fruits. Tastes of Belgian yeast, esters, spices, and fruits. Medium crisp body with medium carbonation. Overall this is a very nice saison.

My wife picked this up knowing I love saison, she made a good choice.

The color is a nice pale yellow similar to hay. On the pour a nice head is formed that leaves traces down the inside of the glass.

The aroma has a spicy, yeasty smell to it.

The taste continues the spicy notes of pineapple, with a hint of sweetness to it. Overall a very balanced and well rounded scent that has many different qualities to it.

I would like a bit more body to it. The only thing I could say negative about it is that it's to light in body, I like more mouth feel.

Overall a fantastic beer that I will return to many times throughout the years

I'm not a fan of this style but there are other beer styles I've grown to love so I'm happy to try it and greatly respect this brewery. Poured from a bottle into a pint glass, dirty yellow, one finger head, lots of carbonation and rising bubbles. Belgian spice in the smell but the taste is sour. Tastes like a watered down Tripel left out in the sun. Light feel, overall it may be wonderful for the style, but I'll pass.

This was poured into a tulip. The appearance was a hazy to cloudy burnt yellow color with a thin layer of white foamy head that dissipated immediately. Light lacing speckled around the glass nicely. The smell had some bubblegum, light Belgian spices, sweet grass, and a light yeasty breadiness. The taste was mainly bready sweet with the spices coming across far underneath. Sweet bready aftertaste. Smooth wet finish. On the body, this one sat about a light to medium on the body with a fairly decent sessionability about it. Carbonation runs fairly light allowing spices to hit a little more on my tongue. Overall, this was a pretty good saison that I could have again.
