April 2016: 330 ml bottle, as Vieille Ville Saison, Cardinal Pub & Bar, Stavanger. ABV is 6.0%. Pale golden colour, large white head. Pleasant "farmhouse" aroma of brettanomyces, hints of oak. Fairly light bodied. Medium dry flavour, distinct brett notes but not really acidic, also peppery notes, medium bitter finish. Good beer.

11.2 bottle. Italian Farmhouse ale with Saccharmyces and Brettanomyces yeast

Straw gold color, wild, geyser bubbles from the super lively yeast. All white crown stands high, leaves a solid cover at all times.

A very wild/sour and earthy yeast aroma. Earthy, straw and dry summertime grasses. Lemmon zest mildly sweet malt. Subtle wild honey notes and green veggie like hop scent. A perfect Saison aroma. Powerhouse yeastie nose.

Such a lush mouthfeel, light, crisp, jazzy and then very lush. Just seems to be pillowy soft and then evaporates on the tongue. A slight, dry, earthy finish rounds it out. Awesome.

Unfiltered, unpasteurized, wild strains of yeast.....oh yeah!!. This is my kinda brew.
The wild yeast has amazing flavor complexity, sour lemmon zest, dry, earthy, leafy notes, dry golden wheat and grassy hop taste all flows together in the most excellent balance. Just perfect for the style. Big X factor!

This Italian Saison is spot-on. 11.2 oz serving is just not enough.

Clear straw colored pour with a snow white head that dissipates quickly. Aroma of yeast, funk and light pepper. Taste is funky with a good bit of pepper flavor also present. Can also taste biscuit, wet bread and and a light lemony tartness. Highly carbonated.

i suspect the price tag on this has prevented it from getting the attention it deserves here on BA. maybe its the misses from ducato that keeps the good ones from getting found out too fast. who knows who cares, this is amazing. one of the most funky and interesting woody saison wild ales ive had. mixed cultures in oak barrels for this beauty, and its a stunning example of the wild fermentation that makes the italians so enjoyable and unique. this is really cloudy and dense looking, heady too, and you can see a ton of soda looking bubbles exploding at the surface. smells different from the thousands of others that sound the same on paper, the oak is immediately obvious, almost seems like white wine barrels, there is a mouthwatering fruity pucker to this and a tannic thing i really like that screams wine at me. the sourness is mixed with gnarly funk too, farm and wet and musty and the best of both worlds. i would in my head assume this was wheat based, but the label says only barley. amazing how they have made such a fluffy full mouthfeel to this without any wheat, it has that raw flavor too that i like in the style, very much pale wheat in nature. its also very mature, dry as they come, and developed to a complexity rarely achieved. its an incredible bottle of beer, probably my favorite from ducato so far. its like the chyropolis they make times a million. the final evolution i think. cantillon good.

It's a very sour saison that has a touch of "Geuze" to it. I like it as it's very drinkable.
