My copy of New Morning is not current. This copy seems over-the-hill and down-the-slippery slope and, thus, makes it hard to rate and review compared to other saisons... most of who are drunk in their first year. But, I can see why many other reviewers like Nuova. It has an energetic use of ginger and other herbs; plus a true display of wheat and, probably, other non-barley grain variants... and knows enough that coriander helps that mixed malt bill. Drank Mattina with pizza from Bonci, an Italian chain with an outlet in Chicago. All good.

So, I have to give Ducato credit. I also owe them a micro-review, despite this my third from them (the other two were on the "1001" list.) But, I confess my prejudice against Italian ales in that they are not as good a value as I can get from Belgium. Nonetheless I go on Ducato's website and see that they have a collaboration with Duvel Moortgat for 15 years and will be distributing DM products in Italy next year. All good; given the high esteem I place for DM and how they let their brewers create and DM helps them spread the gospel, so to speak. So, I hope all this means that I can get more current ales from Ducato since, I'd suspect, the DM relations are reciprocal in the U.S.

L — Pours a very slightly hazy golden orange body with 1.5 fingers of thick white head produced with moderate pour. Good retention and great lacing
S — Wildflower honey, chamomile, grassy hop, hint of vanilla
T — Again, lots of wildflower honey and chamomile, with a mild herbaceous/grassy hop bite to round things out. Not really getting any ginger or green pepper spiciness, which might be due to the age of this bottle. Still quite tasty
F — Light mouthfeel, medium carb. Very easy drinking and refreshing. Reminds me of a pilsner
O — Really unique beer that almost comes across as more of a gruit than a hopped ale. Quite shelf stable.

From notes taken 04/29/17:

Dark but dull opaque yellow, similar to but more haze than your average Hefe. And plenty of yeasty dregs on the bottom. Light lemon-white head of fizzy froth, leaving walls and then berms of lace wherever it swirls. Good retention and keeps a filmy layer for the duration. In bottle, smells like sagebrush, in glass like ginger, banana pudding, yogurt, lemon or orange zest, faintly spicy yeast, approaching pumpkin spice even. Palate is basically a gingerbread — with extra ginger — spice Hefeweizen. Floral and spicy, might even detect the earthiness of green peppers. Coriander is subtle and could be mistaken for anything else in this. Heavy on the banana for what it is, moderate on the doughy wheat and yeast notes but it’s a wonderful balance. Not as close to your average Saison in terms of spiciness or appearance. Lower end of medium in body, creamy, with abundant and fine but loose sudsy carbonation. Flattens fast.

Cloudy yellow, big white head.
Strong and spicy. Coriander finish is interesting. Paired with Mafaldini pasta in Pork Ragu.
