Notes / Commercial Description:
A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Appearance: Slightly cloudy straw-yellow color with a modest-sized white head that quickly subsided to a thin white cap.

Smell: Moderate barnyard funk with some grassy hay notes.

Taste: Moderate grapefruit/citrus notes, grassy hay notes, mild barnyard funk mild floral and mild spicy notes are all present in the taste profile. The beer finishes with some mild floral and spicy notes.

Mouth-feel: Light to medium bodied with a fairly modest level of carbonation. A satisfying mouthful.

Overall: The floral and spicy notes while restrained work perfectly with the base lambic backbone. This was enjoyable and my fear that the spices and floral notes would overwhelm the beer was put to rest upon drinking this beer. n interesting and tasty treat.

Beersel Morning?

Not much carbonation, great aroma, flavour is like a watered down lambic, so it's not as intense or acidic. Some nice Brett character, but I expected more depth. The camomile is a bit odd.

Had on tap. Pours cloudy, bright yellow in color with 1/2 inch head. Taste is light oak, lemon, and funk. Crisp, light bodied, with medium-low carbonation. Super tasty and enjoyable lambic. Could drink several of these.

Dark straw yellow hue, nice fizzy big bubbled head, moderate lacing. Aroma has a lot of citrus zest, lemon peel and some oranges. Plenty of sugary yeast, pretty doughy smelling. Following the nose well, it has a solid amount citrus zest, following a subtle tartness with a dry Belgian yeast character in the back end. Mouthfeel is relatively dry. Very light, citrusy and refreshing.

Drank this delicious treat on draft at Beachwood in Long Beach this evening. Tart, robust, with an old world saison character, surely a by-product of the aged lambic. Very curious how this would be after being aged in the bottle. Outstanding beer.
