A blend of New Morning and 18 month aged 3 Fonteinen Lambic refined for at least 12 months in bottle. It has a surprisingly citrus nose of leather, cellar and animal with hints of dried flowers and honey. Lasting and sapid in the mouth with a sour finish that always makes the lovers of this blend smile.
This beer could very well make you develop an addiction for spontaneous fermentation and turn your entire world upside down!

After a mechanical breakdown, 3 Fonteinen Brewery of Beersel (possibly the best Lambic blender in the world) had economic damage in the summer of 2009. The news caused such a stir in the International beer movement that I called Armand to know how things were. As he needed to sell his Lambic, I immediately got inspired to blend our New Morning with his beer. We selected three 18 month old Lambic barrels that we siphoned in a small tank on our truck. The journey back was long and hard, myself and Manuel took turns driving through Belgium, France and Italy only stopping for gas. After days hand bottling and months of maturation, the outcome has gone over and beyond our expectations and we can say with pride that it was worth it!

Mixed fermentation blend of 82% Ducato’s saison and 18% 3F’s 18 month lambic. Not strictly a lambic blend and more of a wild ale in the style of 3F Tuverbol and Lindemans Goyck.

Bright gold with racing champagne streamers. Huge billowing head, 50/50 ratio beer to foam.

Brett aroma hits first, a bit funky and weird, some medicinal notes, vegetal turnip, apple juice, odd floral herbs. I love Brett, but it seems to clash with the spices in the saison.

Taste is pleasant, lightly tart, bittersweet middle, dry finish. Herbs/spices are prevalent, ginger and oregano, brief Bretty horseblanket note, dry finish with some light oak in the aftertaste. Odd grape candy note.

Medium bodied with a strong carb level, super effervescent, pairs well with cheese and charcuterie.

Overall it’s not bad, not really sure how fresh it is. When Nuovo Mattina saison is fresh, it’s a revelation. In this blend it seems a bit muddled.

I remember seeing this beer when Ducato was first imported, and fancy expensive Italian craft beer was new and exciting. Then they disappeared for almost a decade, and only now am I getting around to trying it. Not disappointed, but was hoping for more.

330ml bottle into a teku. No freshness dating, but probably more than 6 years old.

Mixed look. Early pour reveals a beautiful clear amber/orange body. After the last 2 ounces are poured, gets very cloudy. No head or lacing.

Aroma of honey. Also smells tart.

On tasting, sour aspect reigns, but there are notes of stone fruit and some wood. Honey wafts in and out.

Mouth barely reaches medium, finish a lasting sourness.

Overall, I don't have much experience with this style, but certainly enjoyed the balance and nuances.

A wonderful sunny day beer. A color like a bright spring sun, capped with a lovely white cloud of a head.
Aroma is rich with ripening peaches and nectarines and the weary august dust.
Taste brings an abundance of lightly tart fruits. Some spiced holiday bread notes. A bit of very dry wine and white sherry.

Had on tap at the Del Lago Casino @ , NY. Wonderful blended lambic from Ducato and Drie Fonteinen . Beautiful pour with full but quick head; gorgeous harvest moon gold/rose wine red color. Clear and light. Excellent spontaneously fermented with hints of strawberry within the wood, funk and citrus in the nose; same with some field and leather arising in the taste. The strawberry was unexpected and delightful. Very gentle sipper. Was excellent as a stand alone, but also went very well with food. Loved this beer.

Bottle: Poured a hazy dirty golden color ale with a small foamy head with limited retention and no lacing. Aroma of sour and vinegary lambic with some funky barnyard notes also perceptible is interesting. Taste is mix of highly funky notes with some barnyard, Brett and leather with some over the top acidic and sour notes with some oak notes also perceptible. Body is full with light carbonation. Enjoyable but too acidic for my taste which ends up limiting the drinkability.

On tap at Beavertown Extravaganza. Aroma is quite funky with barnyard and musty cellar notes. Taste is dry and funky with lambic style dusty farmhouse notes.
