I don’t really know why, but at the time I bought this one, I decided to store it for some time. It might have been the brett…

The colour is pale gold, the liquid is clear. The two finger head is white and compact. It sinks down to a thin lid leaving some lacing on the glass.

The smell got distinct brett-introduced flavours, it reminds a lot of Orval. Stable, wet hay, caramel, nail polish and mixed oriental spices. Yet, it is quite clean.

Brett-introduced flavours dominates the taste, too: Horses, stable, dried orange peel, oriental spices, meadow flowers, allspice, cardamom and cloves. Growing spicy bitterness. Hints of plastic and hot wax. Medium body. The aftertaste is smooth with sandal wood, allspice, lemon juice, banana peel and a touch of liquorice. Hay, spices and stable in the long finish.

The carbonation is medium strong, the few mid-sized bubbles are fresh and long-lived. The liquid is mid-smooth.

A very interesting beer, surprisingly similar to Orval.

Classic smell of Beettanomyces Bruxellensis yeast, hay, leather, lightly spiced (coriander).
Straw yellow color, quite opaque.
Abundant and soft foam that remains compact on the head.
In the mouth extremely drinkable body, perfect carbonation: lively, but always remaining in the background.
Taste that highlights the almost total absence of filtration: a delicate but distinguishable Bretta, straw, crunchy and thirst-quenching taste, light notes of lemon too.
Dry but not bitter finish that brings back a more lively herbaceous (woody scents) and citrus (cedar) scent in the mouth.

Chad, King of the Wild Yeasts from Amager Bryghus. Purchased on 18/3/21 at Riverside Liquors, Grand Rapids, MI, for $ 11.22 (Including tax and deposit) for 16.9 oz bottle ($ 0.664/oz). On room temperature shelf at store. Stored at home at 42 degrees. Reviewed 22/3/21. Note that I use DD/MM/YY protocol.
Undated bottle. Served at 55.0 degrees in a hand washed and dried Jester King snifter. Final temperature 56.6 degrees.
Appearance – 4.
First pour – Pale Straw (SRM 2), clear.
Body – Pale Straw (SRM 2), slight haze. When rear-lite, same but effervescence evident. A thin layer of sediment remains on the bottom of the bottle.
Head – Large (Maximum 6.5 cm, gentle center pour), ghost white, high density, meringue-like, slowly diminishing to ten to 15 mm lacy crown and a partial cap varying from nothing to thick. Some pieces of lacing hang on the sides of the glass. Second pour also produces a 6.5 cm head.
Lacing – Fair. Three-dimensional chunks of foam remain on the glass – see also above.
Aroma – 4 – Coriander. No malt, no yeast. A bit of hop-like freshness appears as the coriander weakens to a more generic spiciness.
Flavor – 4.25 – Mildly spicy with a coriander ending. No hop flavor, no malt, no yeast. No alcohol (5 % ABV, as marked on container) taste or aroma. No dimethylsulfide or diacetyl.
Palate – 4 – Medium, watery, lively carbonation.
Final impression and summation: 4 (After deducting 0.25 point for undated personal container) A pleasing ale, IMHO closer to a farmhouse than a wild ale. Still, good although the price point is a bit high.

Pours a hazy straw orange color with a big frothy head that displays good retention.
Aromas of light earthy and rustic funk, also floral. Some sweetness emanates from aromas of bready malts and honey. Zesty citrus peel and light sour aromas round things out.
The palate is very dry and peppery, well attenuated all around. It is very Saison like and has lots of complexity. Flavors of citrus peel, lemon like tartness, grassy hops, earthy bitterness, and bready malts. As the flavors open up, the rustic and funky flavors, notes of brett, become more pronounced, complimented by fruity undertones of pear and peach.
Medium bodied, crisp and with a moderate carbonation. The finish is extremely dry with a lightly tart linger.
This was a very finely crafted Saison/Wild Ale with a host of complex flavors. Really glad I had this one.

I don't see a bottle date or import date listed.

Appearance: It has a very large, fluffy, billowy white head. The body is cloudy and a pale gold straw color. Be careful when pouring this beer because it can give a massive head if not poured slowly.

Aroma: It has a classic sweaty, funky aroma which is very strong. It also has a bit of a wildflower scent in the background. As the head dies that flowery scent becomes more prominent.

Taste: Up front it there is this mix of fresh herbs like bay leaf and bit of thyme, then a touch of peppercorn. It has just a light bit of woody character towards the end but it is very faint. The flavors in this beer are very mellow.

Mouthfeel: Very dry and airy. It has a light-to-moderate bitterness that comes off as a bit herbal. It is easy to drink but that herbal character and bitterness causes some pause while drinking it.

Overall: After a while the beer reminded me a bit of rosemary bread. It is tasty and herbal. It is easy to consume but the presence of that herbal character slows you down a bit. It's a very tasty beer that I would drink again and I would recommend.

I just bought and drank Chad King of the Wild Yeasts Farmhouse Pale Ale, from Amager Bryghus in Copenhagen, ABV 5.00%, IBU 41.

Look: semi-clear yellow light golden with a very thick fluffy white head. It is very foamy, a real gusher.

Aroma: citrus, banana, yeast, some brett funkiness

Taste: The flavor is yeast, biscuit, orange, and orange peels, banana, some grapefruity hoppiness, and lots of brett funkiness. It might be too much brett for some, but I like this.

Feel: light to medium body
