From Bardstown, Kentucky, the Bourbon capitol of the world, to the Northwest coast of Oregon – a truckload of freshly emptied Willett Bourbon barrels rolled into Fort George Brewery, filling the block with a strong oaky aroma. The brewers dutifully filled each one with rich, dark Cavatica Stout and positioned them in the Lovell Showroom windows. And there they sat through the spring, summer, and fall months, aging until the brewers determined it was time. It is time.

2/8/08 sitting at the brewery in Astoria
App: Dark brown with tan head
Aroma: Vanilla oakie notes, bourbon, chocolate and roasted malts.
Flavor: Mmmm, smooth malt with coco notes, vanilla, med-low bourbon flavor, low bitterness and hop flavor.
Drinkablility: High, good balance of flavors w/o being to forward or huge. I really like this beer, and yes I am a sucker for wood aged beers it really seems to bring out the best in dark, strong styles.

A bit sweeter than some. Beat out Abyss 2015, Narwhal, Speedway, and Oak YETI in a blind stout taste test. Very smooth, heavy, and not as bitter or tannin-y as some of the others. Delicious.

Bottle shared at August THT. Very dark brown pour with a thin tan head. Notes of sour barrel, bourbon, vanilla, milk, chocolate. Medium body, soft carbonation and a spicy finish.

Willett barrel aged. Batch 288.
Big tan head. Black in color.
Very little barrel presence. Some char. Molasses, black licorice, chocolate, figs, and raisins.
Medium to full bodied.
Not bad, but not that impressive.

Dark chocolate brown with cocoa powder colored head. Moderate lacing. The aroma is vanilla, oak, bourbon, and toasted malt. Flavor is sweet and savory, with just a hint of chocolate and oak. Very smooth, not a lot of the alcohol burn in the finish. Tasty!

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing nearly opaque black in the glass with a fine one finger light brown head with great retention and lots of lacing. Aroma of slightly sweet dark toasted malt, bourbon, light oak and vanilla. Flavor is dark toasted malt, bourbon, slightly astringent oak with hints of vanilla and chocolate, slightly boozy. Medium bodied with a lightly creamy body and good carbonation. A straightforward barreled imperial stout. The malt is fairly simple, with very light chocolate or berry flavors, but robust enough to balance the good, flavorful bourbon barrel notes. Quite oaky. The finish hovers between tannic oak and hops, but balanced with the well integrated malt and bourbon flavors. Well done. This was a 9.9% version from 2015.
