It's hard to know what Monseigneur D'Esgly, the first bishop of New France, would have thought of this stout. During his time the colour black was symbolic of many things, ranging from death and sin to dignity and temperance. So either this beer is pure evil or an admirable emblem of the simple and sober...
And we can rule out the latter two - this bouquet is neither. It is a potent, indulgent, involved aroma. Sticking your nose in the glass is little different from jamming it into the center of a fresh-baked brownie - it has that doughy, cookied chocolate note encased in a similarly baked, hardened black crust.
But it's not just delicious fudge we taste - there's also vanilla, espresso and toasted hazelnut. Such is the magic of roasted barley! Those who prefer cold pressed coffee, single origin chocolate bars or buying their desserts from a proper bakery will enjoy and appreciate what this flavour has to offer.
So will those that simply enjoy a good, approachable, easy-to-drink stout. Nevermind that it's 7.5% - the alcohol doesn't factor in (at least not where it shouldn't). Despite the added dimension in the taste department - whether for better or for worse - this drinks like any run-of-the-mill dry stout.
Hence I don't consider Monseigneur D'Esgly an Imperial Stout, even if it technically qualifies. It's not the answer to anyone's prayers, and those hoping to have their socks (or in Quebec I'm guessing mittens, long-underwear or toques) blown off won't be fully satisfied, but everyone else will be pleased.

Appearance: It has a nice jet black color to it. It has a nice thick mocha head that dies down moderately and leaves next to no lacing.
Smell: The aromas definitely give out hints of sweet roasted malts, coffee, chocolate, caramel and a touch of vanilla.
Taste: Like the aromas, it has a some sweet roasted malts, roasted coffee beans, light chocolate, caramel and vanilla.
Mouthfeel: It has a med/high carbonation with a nice overall balance and feel.
Drinkability: It's a very smooth drinkable beer accompanied with good flavors and aromas.
