Pays du Soleil is brewed as a saison and not a dubbel, although it has a resemblance to both.

Reviewed from (very) long-standing notes. 750 mL bottle, purchased May, 2012 locally. Reviewed on 1/13/18. Poured from the 750 mL bottle into an El Catador Barrel Aged glass.

A: Dark gold to almost bronze, with a one-finger white head that fades fairly quickly. This has a good amount of carbonation. Quite hazy, but it stops short of what I would call turbid.

S: Sweet malts, barnyard funk, and grassy hay. Mild caramel sweetness, and a mild oxidation. Some spicy and grassy hops remain. There is a fair amount of yeastiness – fruity esters (pears and a touch bubblegum) and somewhat bready. Nice, but not what I expected for a saison – I definitely get some dubbel characteristics here.

T: Sweet yeasty esters up front – fruit with apples and pears and bubblegum – and some Belgian dark candi as well. Malt sweetness, that is bready with just a touch of caramel. A bit of grassiness and a mild barnyard funk with some slight hop bitterness (grassy and noble). More sweet malts and yeast at the swallow, and some candied apple on the exhale.

M: A medium heft to the body. Carbonation sensation is somewhat low, but seems pretty good for the age on the bottle. The alcohol flavors are integrated.

O: Ummm..this was interesting. Weird. It does drink like a saison/dubbel cross – though I don’t think I understand this beer particularly well. I’m just not sure I get it. But it’s not offensive…just interesting.

Poured from a cork'n'cage bomber into a Dogfish Head tulip

L: Hazy medium copper amber pour with 3 fingers of fluffy white head. Great retention and super lacing.

S: Tart and mild funk... lemon/citrus, spice, and grains. A bit musty and yeasty.

T/F: Crackery grains and funk... nice tartness without being sour. Slightly under-ripe stone fruits and lemon zest. Mild spice, barnyard, and grass clippings. Mild fruit sweetness later in the swig. Creamy carbonation... delicate mouthfeel. ABV very well hidden. The finish is tart saison and fruit.

O: An outstanding tart saison. Great flavor and complexity. An impressive beer.

From a large bottle at the 2017 Decatur Beer Festival.
Hazy pale copper body with a fine off-white head.
Moderately tart and strong flavor for style. Higher ABV not obvious. Too funky for my taste but an interesting and well crafted version of the style.
Lively carbonation.

September 2011 bottle served in a tulip glass.

Appearance: like always, beautiful artwork on the bottle, a significant amount of dust on the bottle. I went to release the cage and the bottle exploded open from the excess carbonation. The beer is extremely carbonated and poured out a very thin and murky brown with orange tint throughout. The head is massive with a murky khaki color.

Nose: funk for bays, bitter orange peel, citrus pith, barnyard funk, earthy and organic. Smells very much alive.

Taste: follows the nose but with even more funk funk and funk. Very thin mouthfeel and prickly carbonation to start but it moves into a soft and creamy carbonation when you get halfway through the bottle. Lactic acid is very soft and nice. There is a great tart quality to this beer that is classic to all Saint Somewhere beers. Lemony, citrus, hints of malt in there as well. It has an astringent and bitter finish (maybe from bitter orange peel or Curaçao??)

Overall: The fact that the bottle blew up on me is certainly a detractor however the beer that lepth forth was delicious and very complex. I continue to be impressed with Saint Somewhere, this being the 4th beer from them that I've tried. This is a great hybrid of a classic Belgian Dubbel and a funky Saison.

This was weird, but it worked for me. Looks was dark for saison, but understandably. Smell features caramel, funk, belgian yeast, sweet biscuit malt, apple, booze, hibiscus, and brown sugar. Taste has all of those, but balances better than one would think, I believe carbonation helps with that. Feel is weird, but as a hybrid beer it makes sense. Not sure I need to have again, but a fun experiment to try

Well done. Nice funky aroma on the initial sniff. Then followed by a sour and sweet fruity taste with a bubbly finish. Strong head retention with a light brown and very appealing color. I would buy this again.

L: It pours a dark, hazy amber crowned by a 1” cream colored head that hisses as it recedes.
S: Releases aromas of fruit, spice, wine, and mustiness.
T: Light malt is in the background to lemony tartness, fruit, spice and herbs. Some white wine notes.
F: Medium light body and highly carbonated.
O: A funky well crafted saison that is perfect for a hot summer day.

This one was cocked and loaded! When I opened it the cork almost went through my wall. After an exciting start the beer really didn't do much for me. The fireworks, head, and scents had me really expecting more than the beer delivered.

From a large, corked bottle (pop!), it has a fizzy, short-lived head. The aroma is of spice, mixed with yeast and a fruity zest. Some alcohol in there as well....and rich dark malt. The taste has a notable funk, which is interesting. I like it. Very Belgian. Spicy on the tongue and a little more sweet than expected. The fruit characteristic comes out notably in the taste. Medium in body.
