Poured from a bottle given as a gift, I don't know if this is worth the price or not.

Rated as a beer entirely on its own merit, I'd say this is quite good. Crisp and not overwhelming in any way, I'd say this is even better than most readily available saisons

Pours with a lofty white head into a chimay goblet. A bubbley trail of carb trails from the bottom. A straw color - head not rocky but smooth and lasting with lacing.

aroma of spice and fruit...appley.
taste is not at first to style...but then...what is the style? and i struggled with this designation. dupont, for me, is the baseline.
at first, taste is of a tarty dry metallic nature - with a spicy lingering...kind of heavy. something seems to coat my mouth in the finish: hop presence? rustic flavors? i think that the finish is too present...there is a long LONG unending character to it. i even tried rinsing my mouth with honey... in retrospect, it reminded me of a tannin rich spanish tempranillo wine. it is dry, without a freshness to it...immature and not ready?
other than the dryness, the mouthfeel is light to medium, accurate, i guess. the drinkability for me was in the mid range. the finish is a large turnoff for unpositive ending that was good until the finish.
would like to find this beer again and rereview. so, if anyone wants to send me a bottle...

I visited SPH a week ago with a gang of BAs, and the owner, Don, gave each of us a bottle (2003 version, I believe) of the Saison to take with us. Way cool, eh?
Poured it into a goblet, and it produced a voluminous head. Bier itself was a deep golden color, akin to apricot jam, with a slight haziness to it, and plentiful tiny bubbles journeying topside. The head was easily over 2" thick, and a bit off-white. It had a sort of honey-combed or pock-marked look to it. Lasted quite well, and lacing in the glass was top-shelf. Aroma was of ripening fruit with some mustiness thrown in. Had a feel of prickly carbonation on the tongue, like a hefeweizen, and the body was just enough to get to the medium level. Nice fruity taste, somewhat like mango, pear, a hint of apple, and a smidge of lemon which gives it a refreshing tartness. Seems to have a subtle crackery malt lying underneath the fruit flavors. Finish is bone-dry, but the flavors linger well. Pleasant bier to enjoy on a sunny Spring afternoon, though not a style I'd normally seek out. Cheers!!

Pours a light copper color with a mild white head and a bit of lacing as it goes down my glass. The nose brought some mild hay along with a bit of earth. Those were the strongest components, though there was also a bit of clove and banana in the background. SOme additional spicing as well. Flavor had a really nice earthy presence and amplified everything else from the nose. Good bit of light grain and hay as well. Body was medium with good carbonation and a slightly-dry finish.

This pours a big white head of tiny bubbles on a body of slightly transparent bold yellow. The aroma is slightly of wheat and yeast with lots of musty esters. A very fruity malt flavor greets the tongue with a definite sweetness that's smooth, not sticky. A small alcohol tingle and warmth leads to a finish a clear round spicy hop quality that's slightly resinous and woody.

pours a clear but semi hazy straw gold.. lots of visible carbonation and a creamy, even, picturesque head with medium lacing. aroma is sweet with light fruits, most notably some orange blossom notes. yeasty with light hopping. not too spicy or weird. definitely not in the fantome genre. tastes good.. carbonation is a big high but the flavors of dandelion greens, black pepper and crisp euro hops make this a spry drink that begs for a high drinkability. cold it's a little too numbing and warm it gets a little funky like warm soda. this is best at cellar temp and consumed quickly. this beer is a great style achievement.. but unfortunately reaches nowhere outside the box to create its flavors. had this on tap too and made excuses. bottle agrees.. ok, but i don't see this as being a really special saison... not in the leagues of what i expect from phil. still good though, not worth it unless you can find it in a local shop.

On Tap at Capone's for a saison event, this is from old notes.

A-Dark copper penny with a ring of suds around the glass, spots in the middle, no lace.

S- Getting barnyard hay and some fruit with pears and pineapple. Earthy hops, a str8 forward saison.

T- Hay, straw, light fruits, apple, pear, no banana thank god! yeasty, bready. This is a old keg, so the hops are not in the picture but do impart a nice earthy taste.

M- Medium bodied, lighty carbed, finishes dry. Long linger of barnyard afterwards.

D- I liked this saison and if I see it on tap again I'll probably go for it.

This came in a brown 750 ml flayed-cork magnum that issued an absolutely explosive rupture upon release of the cork. Four inches of head pour for every inch of beer though the head is highly aerated and collapses without delay. The aroma is light and grassy with a touch of heather.

The immediate taste of this “Belgian-style farmhouse ale” caught me off guard. I was at first disappointed. A sharp, grainy bitterness made for an unexpected harshness. The taste is dry, somewhat acidic, and with modest bitterness.

It took me a few unhurried moments to warm up to this. The big puffy head, chunky lace, and pale gold color were appealing. The carbonation was persistent, small bubbled, and furious when poured. After awhile I began to appreciate the rustic simplicity of the recipe though the aftertaste was still a bit tired.

The saison style is open to varied interpretations and I must admit I found this beer difficult to review. This is far from Southampton’s best but I wouldn’t mind having another go at it to see if I overlooked something.

Popped the cork, and just like Champaign, she pours a golden yellow with this small bubbles, but still an inch of ‘er, white head. Lots of carbonation in this one, a real burpy beer.

Aroma was a light malt with candied sugar apples, no farmhouse funk in the smell or the taste. Actually, the taste could’ve used some more fruity goodness, fairly plain jane for such a highly rated brew.

No problem working through the 750, wife and daughter both said the same thing about this one – OK but it doesn’t stand out.

I drank this at a "The Belgian Beer Diaspora" beer tasting hosted by the late Michael Jackson at the National Geographic.

These are my tasting notes:

This beer had a crisp mouthfeel. Bitter and fruity taste. It appeared to have a yeasty aftertaste.

Elaborate, fruity aroma of orange, green apples, sticky red plums and banana pee, along with a slight tartness and a hint of flowers.

Subtle, far from intense, fruitiness of green apple, dried apricot, white peach and nectarine along with notes of grassy and floral hops, hay and coriander. Finishes quite dry. I enjoyed this but I was hoping it would blow me away.

Poured a hazy gold in color with a thick head. There were also some little floaties that would rise to the surface before falling to the bottom only to rise again and repeate the vicious cycle. Nose is full of spices and cloves. Also got a bit of alcohol heat towards the back end of my nose.

Malts come across at first sweet. Then there is a quick tart and cloying spice and clove tang. Cinnamon and ginger. Slight hop bitterness. Also got some light grapefruit and orange rind tones. Mouthfeel is two steps away from being light because the sugars from the malts give the beer a bit of heft. Heavy on the yeast and just a bit less heavy on the bananas. Also a bit too carbontated--kept fizzing way after the pour. Oddly enough I also got a strong alcohol burn as well. Nice beer but not sure I would order it if given the choice.

After wrestling with the cork, this pours a slightly hazy dark gold with over an inch of doughy white foam that settles quickly, lacing as it goes.


Mildly hoppy with a burst of citrus tang and some muted floral aroma.


Highly carbonated, with a nice acidic burst as it greets the tongue. Tartness dissipates into a bone dry sensation by midsip that dominates the rest of the way, only yielding to a metallic aftertaste that lingers. I was so excited after tasting their Cuvee des Fleurs saison to get my hands on their regular offering, and I'm fairly disappointed. Sweetness is lacking entirely, as is the intense fruitiness promised on the label. This only illustrates one facet of the saison: the barnyard funk, which is not my favorite component of a saison.

750ml bottle

Pours a slightly murky straw color with a slight orange hue. Mountainous cream colored head that expands well beyond the confines of the glass and is slow to recede. Thick lacing on the glass.

Aroms ia bready and yeasty with a hint of hops and light spiciness.

Bready and yeasty upfront leading into a slight malty flavor. A bit of herbal hops and some bitterness jump in. A bit of spices just before it finishes dry with a lingering aftertaste.

Medium body, creamy texture, full carbonation.

A competent saison, but just not as complex as I would like. Certainly worth a try.

Appearance: An obfuscated shade of titian (obfuscated and titian being my secret words for today), with strange little chunks that came in two craptacular colors, cheese curd white and corky brown. Thank goodness there weren't too many. The shallow cake of yeast made a half-moon in my glass.

Smell: Creamy yet spicy, and heavy on the yeast. A little bit of cork too, and with a nice herbal hoppy finish.

Taste: Carbonation on the lower spectrum, which put the yeast and citrus flavors in front, without having any other distinguished flavors. I guess I had high expectations over this one and was a bit let down.
