I have been cellaring this for almost 4 years. Today is the day...
Deep black color with a very thin dark caramel head that vanishes quickly.
Nice aroma with notes of licorice, cola, mild whiskey, lots of dark fruits, dark chocolate, cold coffee and Port wine. Alcohol is definitely not very present in the nose.
Intense flavor with notes of cola, dark fruits, roasted malt, cocoa, licorice, lots of Port wine, a bit of peat, charred wood, some whiskey, restrained booze and vanilla. Dry aftertaste with lingering roasted, alcoholic and dark fruit notes. Bitterness is not intense.
Liquorish body with mild carbonation. Alcohol of 15% feels much lower.
Aging mellowed its hops and made it more vinous. Jura whiskey casks only gave it a complimentary flavor; it was not overly predominant. It is intense, but still very much English. I am under the impression that I liked much more the Paradox Isle of Arran version that felt more vibrant, though hard to compare given it was younger.

Bottle poured into a snifter. Best by 8-6-2022.
Pours a dark brown with hints of red and burgundy with very little to no carbonation. Strong whiskey followed by peat in the aroma - smells great. Taste is whiskey, vanilla and spice from the barrel and hints of chocolate malt, however not as good as the aroma. Certainly a sipper. Probably could have used a few more years in the cellar.
