at least the second collaboration between these two. the bottle says brewed in august of 2017, but i have never seen this one around before now. its a barrel aged saison, and go figure from these two, its excellent! its pale as can be, barely even straw yellow, the lightest haze to it, still bright in the glass, huge lasting white head rising high, affordable little bottle too! aroma is lightly tannic and oaky, with some classic de la senne bretty funk to it, some iodine, a little crooked stave sourness, and notes of saaz hops, juniper, kumquat, honeydew, and lemongrass, really light, springy, and sort of tropical too, the barrel doesnt make this heavy in the least, and its very much fermentation driven, as expected. the flavor is all of the nose and then some, mature wild yeast character abounds, impossibly delicate, with the brett up front, farmy and musty, and the cleaner bacterial tang behind it, mouthwatering each time i bring it close. huge herbal, floral, and lemongrass notes, meyer lemon, white grape, sauv blanc, even peach, this is just sexy, and its south of sour, just tangy enough to be refreshing, effervescent, with slight oak on it, so refined and good, yet also so wild tasting. a really great beer, exactly the kind of thing i like to drink the most, and one ill likely buy again. enormously impressive and delicious!

Pours a clouded, pale yellow color with a spongy, stable head on top.

Smell of funk is huge on this, inheriting cactus pulp, dried mushrooms, apple skin and wet garden herbs. An additional layer of old oranges and lemons becomes recognizable as well, tied together by the prominent funkiness on the nose.

Drinks very refreshing, with a light body, higher carbonation and tart finish, creating an immense refreshment.

Tastes of an initial aqueous softness, joined by a fruity tartness, exhibiting oranges, wet cellar and guava juice. Turns even funkier then, dryer with mushrooms and moldy wood, accompanied by a glimpse of mellow, spicy yeast. The yeast enhances the tartness in this by lending a lighter bread and rock sugar note to the flavors, as well as lighter peppers and yogurt. The beer finishes soft, wooden, with a prevailing tartness, which lingers on the tongue for a longer while.

This is a fantastic beer, showcasing the best of both worlds, a great saison and a great sour. Its complexity is astonishing, it makes you drink the beer carefully and slowly, while at the same time you‘d like to drink in big gulbs, since the beverage is so tasty and refreshing.
