An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude.

Pours a deep motor oil brown with copious tan head. Smells pleasantly of vanilla, wood, bourbon and cocoa. Tastes sweet toasted malts forward, vanilla, wood, bourbon and vanilla with a hint of smoke. Mouthfeel is medium bodied with mild effervescence preventing it from becoming syrupy. Slight tacky finish, probably better with aging but overall very good. . .

update: fresh by Feb2017 - perhaps my tastes have changed since the initial review. . . but this year's vintage is solid, a lot of bourbon notes in the smell and taste. Well balanced and a smooth, medium bodied stout - I wish it were a bit thicker - but overall - great oak bourbon stout

23.5 degrees Plato

APPEARNCE: Pours clear black and yields a two finger, medium looking, creamy tan head with good retention. Black body with higher levels of carbonation evident for the style. Head slowly fades to a good wisp and coats the glass with lacing. A splotchy wisp remains the whole way leaving some dots of lacing down the glass.

SMELL: Dark chocolate, dark cherries, oak notes and some vanilla and bourbon on the nose. A bit mild for the style perhaps, but still nicely balanced.

TASTE: Dark chocolate and oak flavors up front, with some light roasted notes as well. Caramel, roasted flavors and bitter chocolate at the swallow. A medium but lingering finish of oak, light vanilla, bourbon, bitter dark chocolate and some dark cherry notes. Nice stuff. A touch boozy perhaps, but good.

PALATE: Medium body and carbonation. Creamy on the palate, goes down fine and finishes a bit mouth-coating. Full enough for the style.

OVERALL: Good, but nothing overly special. Granted, it’s hard to stand out in such an oversaturated field. This is nice enough, but it’s missing a little extra in the barrel execution to make it stand out from the crowd. Worth drinking if you get the chance, however. Thanks again guys!

This beer will always have special meaning to me because it got me into craft beer. The beer packs a wallop and is very heavy bodied, but the flavors just come through so well. Beautiful dark, opaque black color with a small, tan, creamy head. Tastes and smells of coffee, chocolate, malt, touch of vanilla, and the wood notes from the bourbon barrels. It's a boozy beer, but it is so good, it'll be tempting to drink the whole bottle or the bar's supply.

From batch #13, aged in Four Roses Bourbon barrels

A: Even putting this one up to the light doesn't help, as it's a black hole, swallowing every bit of light that hits it. Creamy .75 finger head and exceptional lacing.

S: Toasted coconut, mild cocoa and smooth whiskey. The Four Roses is certainly detectable but sweet Jesus, this is absolutely perfect.

T: Extremely mellow, and I say that with much due respect. Unlike so many other ADIS's, Dark Hollow doesn't seek the EXTREME edges of the style, pushing the boundaries to places it's never been. No, BMB's Dark Hollow is quite content to kick back, put it's feet up and simply let the nature of things do the talking.

In a word, balance.

Relaxed and smooth booze flirts with 50% dark cocoa covered coconut shavings. It should be noted that BMB changes up the barrels from batch to batch, but I must say that the Four Roses conditioning on this one is insanely delicious. In the end, it all comes together like a chilled, bourbon induced coconut hot chocolate.

M: The mouthfeel is really, really good - but not great. It's not extremely viscous, but rather a bit more accessable, as it drinks quite well. The nitro tap really adds a complexity to this that I dig.

O: Ssssshhh! Don't tell anyone that Blue Mountain's Dark Hollow is one of the top five Barrel Aged stouts in America. I had a "moment" with this one, and I cannot wait to share it with my closest friends and family.

Simply put, this is bottled perfection.

Served in a Dogfish Head snifter.

I felt like I needed a souvenir of sorts from my first visit to the brewpub, so why not a nice seasonal stout? This stuff pours a deep, dark black-brown topped by a finger of tan foam. The nose comprises roasted malts, coffee, chocolate syrup, and a hint of char. The taste brings in more of the same, with the roast and coffee both bringing some harsh darkness. It's powerfully roasty in all the right ways. The body is a hefty medium, with a light moderate carbonation and a drying finish. Overall, a damn solid stout, probably my favorite Blue Mountain offering at the moment. There's not much of the barrel present here, but something tells me the wood contributed some minor char instead of the whiskey. I don't mind that much this time.

Pours completely pitch black with a massive mocha head.

Smells of rich chocolate, bourbon, and hints of coffee.

Taste is a combination of chocolate and bourbon, with hints of vanilla...extremely malty. Mouthfeel is heavy bodied, rich, and creamy.

I love bourbon and great beer, so I feel that this is a perfect best of both worlds. I'd say I could drink this all night, but with the high ABV I'd probably die. A delicious sipper.

This beer was very disappointing to me unfortunately, though Ben (BigSexy410) was nice to share it anyways.

The beer pours a nice dark color with ok head and some lacing, pretty solid overall but a little more fizzy than you like to see normally.

The smell is a bit scary, it's like powdered cocoa and a little bit of oak but it all has a kind of strange off sweet thing going on that is not what you normally smell in a BA imperial stout. I'm missing the rich malts and sweet and savory bourbon that usually is customary in these types of beers.

The flavor is just downright awful, there is no anchoring dark malt, only a very slight fake vanilla taste, again cocoa powder, and then basically nothing. Huge let down.

The feel is not very good either, thin and bubbly, the taste and this together just make me not want to have much of this at all, it was hard to get thorough three sips let alone my half pour of the bottle. I dumped this. Maybe this batch was off, but I really think this was a big letdown and I was hoping for better.
