This beer is a huge malty doppelbock dubbed the Hoppelbock because of its strong noble hop finish. This limited release beast makes itself known around the middle of February, well into Wisconsin’s wicked winter, when a Big bock beer such as this sounds super tasty.

Pours a medium brown with a slight reddish hue. Aroma is of good munich malts. Some foam with head that dissipates quickly. Mild carbonation with initial indication of chocolate. Distinct peppery aftertaste (although not overwhelming). Good example of a dominate malt presence with only a mild hop indication. Not a bad dopplebock, but could use a little more bite to make this one interesting.

12 oz. bottle poured into a pint glass.
Appearance: Brown, slightly opaque. Small amount off white head rapidly falls with no retention.
Smell: Nice malty smell. Can defiantly smell the caramel malt. A hint of chocolate malt as well.
Taste: No real alcohol taste, perhaps overly malty tasting. Chocolate malt flavor overpowering.
Mouthful: Seems to be over-carbonated. Body comes off very light.
Overall: Not one of the better O'So seasonal brews. Relative lack of munich-malt in taste hurts this as a doppelbock.

Pours with a small thin tan head. Aroma is mainly molasses with some black patent and roasted barley. Taste is similar, but chocolate malt stands out in a weird unpleasant combo. Very slight carbonation which is not to its advantage. Kind of over heavy. Seems to be more in the direction of a messed up porter. Not too easy drinking.

L: Pours dark chestnut under a 2” clingy cream colored foam collar.
S: fresh bread, dark breadcrust
T: Very rich and malty with a blend of dark sugar flavors and dark bread.
F: Medium full bodied, medium low carbonation, creamy.
O: Very good but comes across as more of a Scotch Ale than a Doppelbock.

Had on tap. Reddish brown mostly opaque body with a finger of tan khaki foam. Huge dark fruit: plum, fig, date especially, some supporting chestnut and dark bread malts there too. Taste is much the same with a floral hops finish. Feel is very smooth, medium to light bodied, but decently warming on the palate. Solid all around

Pours brown with a creamy lasting thin tan head.
The smell is of nuts with a muted fruitiness and floral character.
The taste is of a maple-like sweetness with sourdough bread and a floral touch in the finish. Some alcohol shows.
A well-done doppelbock.

Served from tap in a tumbler at Firkin.
Just what I love with my beer: S & M. And not the Rihanna song, either. Anyway, this stuff pours a clear tawny topped by a finger of off-cream foam. The nose comprises flowers, dry maple syrup, white bread, and a hint of vague fruit in the short distance. The taste mostly brings in more of the same, with more syrup and a stronger fruit character, one that leans heavily toward green apple. This fruitiness is definitely off-putting and out-of-place (even though this isn't the first doppelbock I've encountered with such an odd flavor). The body is a light-leaning medium, with a light moderate carbonation and a fluid feel. Overall, a decent d-bock that's ruined by that damn fruit character. I don't know what causes that, but it helps absolutely nothing.
