La Tripe à Trois est un clin d'oeil au style belge triple. Normalement de couleur blonde et tirant près de 9% d'alcool, la Tripe à Trois n'en fait pass exception. Cette grande bière à déguster à l'apéro est composée de malts québécois biologiques et de houblons européens. Bien que l'alcool colle aux parois buccales, les saveurs des levures enrobent le palais pour offrir une expérience gustative typiquement belge. Accompagnée d'un cheddar fort, cette triple saura plaire aux amateurs de blondes qui, sans équivoque, sortent de l'ordinaire. Les amateurs de bières complexes seront heureux d'apprendre qu'une partie du brassin repose en fût de chêne. De plus, une seconde partie du brassin fermente dans un deuxième fût de chêne avec des levures de type Brett-anomyces. Méconnues au Québec, ces levures sauront surprendre l'amateur de bière de tout acabit.

2021 Bottle. 11% Bright golden orange with slight haze lasting head and lace. Tart medium farmhouse funk and grassy aroma. Medium light sweetness for a tripel with funky apricot fruit tartness. Very clean funky finish with fine sizzling carbo. Medium body soft but with a crisp finish. Can make a brett tripel much better than this, even though I prefer non-brett tripels.

2013 Vintage, thanks to mTomlins!

Pours a nice head, thin ring of retention shows some lace.

More of a sourness to the aroma than barnyard funk, with the usual tropical fruits and phenols in a triple.

Rainier cherry flavour upfront with some nice tartness. Some underlying leather, but there's way more tartness than something like Orval. Tropical fruits and a hint of spice round out the flavour. Subdued bitterness.

Moderate body has a light acidity, with a slightly drying finish.

Haed deep orange colour, 1.5 fingers of white head, some lace. Smell is fruity with a good deal of brett, orange and lemon, quite funky and musty, some notes that are similar to oak though I'm pretty sure this has not seen any oak, quite a nice mix of fruits and musty funk. Taste is a bit of a let down compared to the nose, still bretty and fruity with light tangy-yeasty flavours, lemon and green apple, good flavours all around but they don't come off as weemless as the nose does. High carbonation, medium-full body. Quite good and the nose is fantastic, quite drinkable and worth revisiting.

Poured from a 341 ml bottle into a stemmed tulip glass.
Bottle Date: 8/2013; Poured 10/2013

A: Clear and light copper in color. Pours to 1 finger of bubbly off-white head and falls to a sudsy collar with a bit of lacing.

S: A pronounced sourness but not overwhelming, some sweet malt, a bit oaky; a nice big Belgian nose (banana, lemon), wood.

T: Wow, very complex! The big grain bill gives a round sweetness typical of triples but the Brett sourness really dries the finish off with only a kiss of hop bitterness at the end. The oak aging really mellows everything out.

M: Medium-high body and medium carbonation; smooth and round with the carb really lighting up the beer.

O: I very enjoyable brew; complex with a great mixture of sweet malt and tart sourness.

A: A golden honey color typical to a tripel. A finger or two of large bubbled head and carbonation is easily visible.

S: You can definitely detect the Brett. A slight bit of malt sweetness.

T: A nice mixture of brett yeast combined with the malt sweetness of the beer. Bitterness is also appropriate. Honestly the alcohol is not all that detectable. Somewhat spicy and bread like as well.

M: Crisp and clean. Not too syrupy like some high ABV beers can get. Very bubbly and effervescent.

O: A good beer and one of the few Brett beers I've had.
