It pours dark amber with a very thin head. The aroma is of thyme and perhaps sage. Not much in terms of hops or malts as the herbs are dominating the nose, although they're not too intense. The taste is moderately bitter, with more of the herbs coming through at the end. It is supposed (as per the label) to also contain chamomile, anise and mint but I do not detect them. Medium body and with little carbonation.

Poured into a Chuckanut pint glass. Pours a coppery amber with a thin white head that dissipates to patches with slight lacing. Aroma of pilsner malt, earthy summer herbs (sage is most distinct), a hint of grassy hops. The herbal smell is inviting. Flavor is light biscuit malt, sage, thyme and other Mediterranean herbs, chamomile bitterness. Finishes with bitter herbs, a hint of mint and light pale malt. Medium bodied with good carbonation. This is a nice herbal ale that is dominated by sage and thyme. These distinct flavors mask some of the other herb flavors, although there is light mint in the finish and the bittering tastes mostly like chamomile with little distinct hop bitterness. Although the malt is sufficient to support the herbs, it has little character of its own and it would have been interesting to taste some hop interaction with these nice herbal flavors. This definitely has the taste of the Mediterranean and Middle East. Exotic and pleasant. I would definitely get this with a spicy regional dish.

From notes taken 12/16/16:

Very attractive clear dull amber. Creamy, foamy lemon white head of moderate retention. Grassy, grainy, bready aroma, pretty generic, but with suggestions both metallic and herbal, like pencil shavings or almost oregano. This latter nose quality is very prevalent on the palate, throughout. Must be the Lebanese spices the label says were added. Apart from that, very grassy, caramel in the background, with lightly metallic, almost bloody aftertaste, distinct but not strong enough to be unpleasant. Medium-bodied, sudsy to almost effervescent and tingly, mildly dry finish. Refreshing enough, interesting flavor. All in all, slightly below average for a Pale Ale, but since it is supposed to be based on some ancient brew, one should definitely should let that fact slide.

This might not be everyone's cup of (herbal) tea, but I found the flavor combination quite interesting. The spices play on the palate, first one, then another, with floral notes and a little citrus tang peeking in. In combination, the spices present aroma and flavor profiles reminiscent of oregano. The finish is bitter, crisp, and dry. A very nice beer that I'd think would be a natural pairing with falafel or shawarma.

Copper and slightly cloudy, no carbonation and topped with 3 fingers of glassy head.

Smells of sweet malts, herbs and spices. Middle eastern spices, cardamom, and cinnamon.

Its very spice foreword, cardamom, cinnamon, black pepper, and a slight heat, followed by some malty sweetness, and dulled, bitter finish. There's an almost cola like quality at moments.

Medium light, slightly syrupy body, with little carbonation.

Got at Tiffany's in Kalamazoo a week ago. Drank in New Hamburg, ON, Oct 11th, 2016. Very unique beer in its expression.

A round of applause for 961. Finally a beer from a middle eastern country brewery that can be put in the same category as an American craft beer. This beer stood out to me as the best of the bunch. Granted I did not find the American Pale Ale. But I was happy to consume this.

Poured into a Horizon Society teku. Bottle #: L2456671.5 Contains: thyme, sumac, camomile, sage, anise & mint

L: Golden copper color with a small head that lingers just around the glass wall.
S: Interesting malt nose with hints of citrus and medicine. You really get the thyme and sage. Smells like an herb garden.
T: Standard APA overall, with notes of the herb garden. Quite herbal, but not overly so.
F: Soft, gentle carbonation that is fuzzy.
O: Interesting beer that I didn't realize had all of those ingredients until I read the label. Great nose on it. First Lebanese beer, I think.

Did not enjoy this at all. Smelled and tasted like pizza to me and couldn't finish it.

Poured from bottle into a pint glass

Appearance – The beer pours a nice clear amber color with a billowy white head of foam. The head has a moderate level of retention, fading over time to leave a bit of foamy lace on the sides of the glass and a very persistent thin foam of white bubbles on the top of the brew.

Smell – The aroma of the beer is strongest of a grainy and spicy smell with lots of spice of coriander and cardamom. Along with these aromas are some sweeter smells of caramel and a bit of a corny smell. Other smells of a floral and herbal nature are there as well, giving a rather sweet but spiced smell to the brew overall.

Taste – The taste begins with a bready flavor mixed with a decent showing of caramel sweetness and some spice of coriander and clove. As the taste advances more and more spice comes to the tongue all while some herbal and floral flavors greet the tongue. While these new flavors come, some of the sweetness fades, all while a little bit of a graininess works its way in. With a hint of a yeastiness and some earthy and almost juniper flavors coming at the very end, one is left with a somewhat drier and rather spiced flavor to linger on the tongue.

Mouthfeel – The body of the beer is on the thinner side for a brew of 6.3 % with a carbonation level that is rather average to slightly higher. For the style it was decent and complimented the mix of spice, floral/herbal, and sweet flavors rather nicely, although a little thicker body may have amped up the flavors a bit more.

Overall – While not the best pale out there it was a nice one to try. It had a decent showing of spice and herb/floral tastes all while keeping a more easy drinking feel and flavor profile.

Quick notes:

Very pretty, clear amber body, but very little head, and poor retention. Not an inviting appearance.

Aroma was sweet, malty, and spicy - full of herbs. Nothing stood out immediately.

Flavor followed perfectly. The herbs aren't easy to identify; I get cilantro and ginger, surrounded by a lightly hopped, sweet malty body hinting at honey. Unlike most spiced beers, the added flavor was noticeable without being overpowering.

Great mouthfeel: slick, relatively full-bodied (certainly so for the style), lively with no sting.

This is not a bad beer at all. I wouldn't go out of my way to try it again, but it's unlikely to be the worst offering on the menu.
