Bottle: Poured a clear dark golden color ale with a nice pure white foamy head with excellent retention and some very good lacing. Aroma of strong peppery yeast with some solid malt notes and light Chardonnay notes is very pleasant. Taste is also dominated by strong peppery yeast notes with some solid Belgian style malt and a dry Chardonnay laced finale which is quite spectacular. Body is full for style with great carbonation and no apparent alcohol. One of the bets Tripel I’ve had the chance to try.

Bottle at Mondiale 2013.

Golden orange in colour, witha hefty white cap for a head. Nice retention and lace. Nose of fruits, oak, yeasty and estery character. Palate has grains, sweet malt character, barrel and some white wine + oak notes. A good bit of funk, but not outstanding. Nice beer, but not having had the base I have no basis for comparison. Not as good as some other BA's tripels out there though.

Tiny bits of sediment float aimlessly in its hazy golden amber body. A fluffy cap of paper white head boasts some good retention, considering its ABV. Sheets of lace are left behind as the beer recedes.

It's peppery and chalky at first with the chardonnay character quick to pull through after. A little tart with booze soaked apples and apricots. It's got a syrup-like sweetness to it that gives a faint ice wine impression. The classic Belgian pear drop character oozes at the center. A faint oakiness plays into the sweetness and brings forward its ice wine quality.

It comes in full and rich with plenty of boozy sweetness. A flash of white pepper and chalkiness quickly gives way to sweet bruised apples and apricots, giving you something to chew on. The alcohol character gets more coarse as the beer continues but there's plenty of breadiness and pear drop to make sure it doesn't get out of hand. A bit of fruit skin tartness pinches the back of the palate. The oakiness is subtle and comes through more in the feel, helping to round everything out.

The full, velvety, rich texture makes this a treat to drink. The highlight of the barrel aging for me isn't so much in the taste as it is in how it rounds everything out and makes the booziness sweet and approachable. The carbonation has a classic Belgian zing without being over pronounced.

This full bodied, velvety Tripel lies more on the sweet and dessert-like side of the style. It's incredibly rounded with plenty of complexity. I do wish the barrel character came through more in the aroma and taste but I'm pleased in what it achieved overall.
