Hazy orange in color with no head. Heavy lacto aroma with oak. Mild citrus and hints of bourbon as it warms. Taste much like the aroma, bourbon really coming on as it warms. Medium body with crisp carbonation. Quite sour with strong lingering lacto notes. Overall, very nice beer. Big difference as it warms and bourbon appears on nose and tongue.

From a 750 ml swing-top bottle (2015 vintage) to a goblet glass. Reviewed from notes dated June 7, 2015.
A-The beer is murky and light honey in color. The head is nothing more than a short, white film of foam that fades quickly to nothing and leaves no lacing. A few fine bubbles crawl up the glass.
S-The aroma is pretty sour with some white wine, peach, white grape, and vinegar flavors. Mildly funky and a bit sulphuric.
T-The taste is fresher and more fruit forward than smell. Some tart peach and apricot flavors come to mind. There is still some white grape and a vinegar flavors going. The finish dries out a bit. A touch of oak and funk too.
M-The feel is a little watery with a lower level of carbonation.
O-This is a decent sour beer with some nice fruit action. I don't know that I would hunt this one down, but I could easily see drinking this with some creamy camabert or similar cheese and enjoying it. Also, contrary to the description, this beer is NOT aged in bourbon barrels, but in oak barrels intended for Chardonnay wine according to Santa Fe Brewing.
