Notes: We’re at it again with Old Father Time for a new Chronology Series - a Scotchology, if you will, with a base resembling a Scotch-style ale. In this installment, we brewed a wee heavy - known for rich, malt-forward flavors - and set it to age in bourbon barrels. Every six months, we’ll take a quarter of the barrels, blend them and bottle them. This first bottling represents the nuances imparted to the base beer after six months of barrel aging.

To say I was excited about this would be the understatement of the century. Ever since I tried AleSmith’s Barrel-Aged Wee Heavy, I’ve been kind of obsessed with the style. Once Chris showed me that this was coming up from The Bruery in increments of six, 12 and 18 months, I instantly wanted to try all three. Can’t wait to get this underway.

Poured an auburn, dark amber, murky color with two fingers of khaki tan, frothy head. Above average spotty lacing on the sides of the glass. Above average retention on the top all the way down. (Sight - 4.00)

Smelled sticky caramel, toffee, boozy bourbon up front, but mellowed out, light tobacco, faint dates, some butterscotch (wishful?) and brown sugar. (Smell - 4.00)

Taste followed the nose. This definitely needs some more time, coming in a tad hot. Getting caramel, toffee, somewhat boozy bourbon, brown sugar, vanilla (didn’t recognize this on the nose), hints of dried tobacco, some oaky wood and muted butterscotch. (Taste - 3.75)

Medium body. Creamy texture. Average-to-lively carbonation. Long, boozy, warming finish. (Feel - 4.00)

God I wanted this one to be better. I think it will be with time, but not quite there yet. Looking forward to comparing with the 12 and 18-month versions. (Overall - 4.00)

Pours rusty brown with a 1/2 inch khaki head that quickly disappears completely. The smell is of caramel, brown sugar, vanilla and bourbon. The taste is of caramel malt, brown sugar, subtle vanilla and bourbon. Sweet but, not cloying.

Split with JLindros.

A - Poured into a Kate the Great tulip a nice dark brown almost black hue with a thin mocha head and a foamy halo.

S - Big aromas of caramel, toffee, and dark fruits. Light vanilla.

T - Taste is similar to the nose with loads of caramel and toffee. Loads of creamy vanilla, candy caramel cream. Lovely malts.

M - Mouthfeel is lightly carbonated, creamy, alcohol hidden incredibly well. Practically luscious.

O -Overall this was a very solid scotch ale. Excellent caramel and vanilla. Super easy to drink.

Split with rudzud
Big creamy tan head, good retention and lacing, darker hazy brown color

Nose sweet brown sugar, big caramel toffee candy like, sweet bourbon barrel, dark fruits candied fig, light vanilla

Taste big sweet candy malt, coffee, little butterscotch, caramel, toffee, mild sweet bourbon, vanilla barrel, mild dark fruits again candied fig date, nougat, light alcohol, drier finish

Mouth is fuller bod, rich creamy smooth caramel, medium carb, light alcohol

Overall very nice, super smooth drinkable, nice barrel, great base

Taster at the taproom. Thin off white head. Very boozy on the nose with a heavy malt undertone and very sweet. Gives off an alcoholic heat. Could definitely benefit from more aging. The barrel doesn't hide much with this one. Taste is a very sweet light malt and slightly woody tang on the finish, hints of vanilla. I expected a bit more from this, but it's very hot. Looks great, but doesn't satisfy me as much as the others.

Dark burnt copper-red with a thick, light tan foam blanket that dies to nothing at all, leaving a shiny brandy-looking beer.

Smell is soggy toast, toffee, graham, bourbon, and scotchy caramel.

Taste is caramel, bourbon, dried leafs, bourbon, toffee, bourbon, and dry wood! Needless to say--hot! With a dry, chewy finish.
