The primary component of our "White Oak" ale is a 100% barrel aged wheat wine that we affectionately refer to as "White Oak Sap." Essentially a "summer" barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we've added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate...hence the name.

Rated blind.

A surprisingly cloudy, dark orange brew, with great head production and retention.

The nose is boozy and grainy, featuring corn, bourbon, vanilla, and chocolate.

On the palate, this is an extremely malt-forward brew, and quite sweet. Notes of corn mash, bourbon, booze, sugar, vanilla, coconut (from the bourbon), and a bit of chocolate.

Hot and thick feel, quite boozy but not unpleasant. I'm thinking a golden EBW or a Wheat Wine.

Appearance - The beer poured a rusty color with a white head crowning the glass.

Smell - The nose was smooth vanilla with hidden wheat nose. The nose was not particularly strong.

Taste - My first thought was wheaty white chocolate. The smooth mouthfeel adds depth to the profile. The creaminess melted well with the wheat from the style.

Mouthfeel - Very smoothand creamy.

Overall - This would make a great dessert beer.

Pours a golden ember, fluffy tan barm which settles quickly into a thin, persistent ring. Aroma is big & muscular- lots of sweet, rich caramel malt & adjacent aromas (toffee pudding, warm nut). The coconut is husky & smells more like dried flakes than fresh coconut, and it waivers on being too dominant. Couldn't find any cocoa, maybe a hint of vanilla, but on the whole it smells like a coconut English olde ale.

The taste is very similar, though the coconut is incorporated better & is less assertive and more complimentary. The bourbon is a tad hot / boozey which draws away from some of the earthier, richer flavors while maintaining a level of that treacly caramel malt. Vanilla is floating around but never finds its role, no sign of any chocolate / cacao - perhaps this has sat a little too long? It is a good beer - maybe a tad less heat, a little more vanilla, keep the coconut as is.

It pours dark amber with an impressively large head for a beer of this ABV (15+%). However, the head only last a minute or two, leaving no noticeable lacing behind. The aroma is primarily of bourbon, with hints of chocolate, toffee, molasses and some dark fruit. The taste is fairly sweet, and in many ways it reflects the nose, with bourbon notes, chocolate and malty sweetness. I would not have guessed that there is wheat in the grist of this ale as there are none of the stereotypical wheat aromas/flavors that I can detect. Not much in terms of carbonation and a very chewable mouthfeel. This is one crazy complex beer. I normally don't enjoy non-stout bourbon-barrel aged beers but this one is up there with the best BBA stouts I've had.

A - clar amber color with a head that dissipates slowly and is white in color
