A re-creation of an historic beer style originally made in Dortmund, Germany. Adam was the first beer produced by Hair of the Dog.

L: Inky brown, not much of a head, uneven lacing.
S: Sweet sweet nutty fig, a bit of berry and leather and cocoa.
T: Candied figs, toffee, a slightly leathery touch to the body, less fruit than the nose but still some, and growing hoppiness as it goes on, and cocoa that grows on the finish. Notes of roasted nuts and bread crust. Bright and roasty and woody.
F: Moderate carbonation, which is high for this style, but not that’s not a criticism. Nice and warm on the finish.
O: What a good beer. It begs you to come back quickly for another sip, but don’t. You gotta savor a beer like this.

On draft at The Biere Library in Corvallis, OR 01/08/2026. Appearance was not encouraging. It definitely looked well-aged with plenty of sediment in suspension. The aroma, however, dispelled all doubt. As did the flavor. And the mouthfeel. I’m not sure what it would be like to call the soul of an old friend back from heaven for a final chat, but I imagine that it would feel similar to drinking this beer.

Having a 10 ounce glass of the right now at a bar in PDX. Last keg they have of this classic. So good. Adam you will be sorely missed.

Batch 99 from 2019, thus about 5.5 years on it when opened and consumed. I love the color, dark gunpowder is the desctiptor I think is best. Foam is vibrant for a beer this age, but fizzles out pretty quickly. Serious scents of dark fruit are available. I've had this beer once before years ago, and it's drinking as well as I recall. Lots of dark fruit flavor and fig. I think it's evolved heavier to this end, I'm not getting a ton of leather like I remember. Plenty of prickly little carbonation bubbles carry the dense flavors across the palate. I thought it'd be flatter than this for sure. Either way, it's a treat to have considering. I can still get more of these along with Doggy Claws, good times.

12oz bottle poured into a straight walled tulip. Probably dated circa 2011-2013?

A: Mahogany brown with a finger of creamy beige head that retains well. Dotty lacing.

S: Bready malt and crust. Brown bread. Molasses and black cocoa powder. Tootsie rolls. Toasted chestnuts. Faint berry skins. Slight earthiness from the hop character that has hollowed out with time. Another, nuanced earthiness from the aging yeast. Moderate wet paper bag oxidation.

T: Follows the nose. Nutty and fudgey up front. Molasses and brown bread. Toasty chestnuts. Musty yeast that is just now getting that autolysis earthy dimension. Very faint traces of hoppy tobacco, spice, and bark. Berry-like dark fruit for an instant. Papery oxidation is mild. Brush of alcohol. Finish is drying with an indistinct hoppy bitterness and a lot of nice malty toast, fudge, and brown bread.

M: Full bodied with a heftiness that is still light on its feet. Creamy and lush. Subtle alcohol warmth. A rather surprising amount of carbonation is still intact. Gently prickling. Moderate raspy hop tannin.

O: This held up really well to the extended aging, which perhaps should not be a big surprise. I think this is probably the end of prime drinkability though. Solid beer for what it is. I'd say it isn't super well defined by any style guidelines. It isn't really a classic Old Ale. Just a strong ale that borrows a bit from American barleywines with some good German specialty malts. It's got a good dark malt character that never really gets roasty. Drinkability is high for the size of it, too. Would absolutely drink it again and buy it again to age.

A - Dark raison, burgundy colored pour with dense, creamy toffee colored lacing.

S - Massive aroma with dates, figs, some dark fruit, leather, and some alcohol presence.

T - Alcohol, figs, dates, raisons, leather, followed by more alcohol, there's a very low detection of chocolate, and finishes on the sweeter side followed by more alcohol.

M - Thick silky body that leaves a sugary residue on the lips.

O - Aroma is much better and wish I knew when this was bottled, obviously it's at least a couple of years old. Really stoked to finally have tried this before they're all gone.

Received from @turkeysdrinkbeer in August 2022, drunk in June 2023.

L: In the glass, it's a rusty black, the colour of a tinned dark cherry. A fragile rim of dirty white head clings to the edge of the glass. Slow-moving, small bubbles can be seen moving up the glass in orderly columns.

S: Musty oranges, plums, figs, dates and brown sugar overlay cricket balls, old cupboards of clothes and cloth, and your grandma's Christmas spice rack (your grandmother - mine was Ukrainian so she didn't have one!).

T: The taste is tangy, musty, port-like, sweet, syrupy, barrelish and despite that mishmash of sensations, utterly balanced. There's an orchard of plums, figs, and grape skins. Sweet, sugary musk sticks vie with alcoholic warmth and mulled wine with cinnamon, cloves and nutmeg. Not one flavour note dominates, leading to an incredible ride of dialled-back, toned-down and considered flavours, all of which come together and call for winter nights, crackling fires and old, leathery furniture.

M: It's quite full and still in the mouth, but it plays to that dialled-back flavour notes and ratchets everything up another notch.

O: This is the ultimate synergy of flavour, mouthfeel and nose. As noted, nothing jumps out as dominating the beer, but taken as a whole the beer delivers a luxurious experience. I noted somewhere else that losing Hair of the Dog is a tragedy, even for a beer nerd 10,000km away, and this beer does nothing to change my thoughts on that one.

Had Adam poured from 12-oz. bottle, label printed "Batch 102," gift from my little bro', into snifter.

Pours apparently black but actually deep golden-brown when backlit, with 2-finger, creamy light-tan head, with excellent retention, leaving slim, splotchy rings of lace down the glass. Huge leathery and mild roasted malt aroma off pour, then some grassy hops, displaced by growing chocolate and sharp, dark fruit as warms. Begins malty and smooth but leathery, then some hop and growing alcohol bite, as unsweetened chocolate arrives, and not a little smoke as warms, before a warming, slightly biting, still complexly and overridingly malty, almost chewable finish.

This was a bittersweet pleasure, since Hair of the Dog has closed and I got there (only) once, in summer 2014, when I enjoyed Adam from the Wood. Adam isn't, wasn't, bad sans wood, either. An experience rather like a fine cigar. Cheers, Alan!

Batch 27, 1997 vintage

Alright, let’s throw it way back for a minute. The oldest beer in my box from Hair Of The Dog, a 1997 Adam. The bottle/label itself is surprisingly intact for its age, but I’m wondering if the beer itself has held up. Let’s crack it open and find out

Pours a dark brown with just a ring of dark brown bubbles that leaves no lacing but has a ton of particulate floating about

The nose obviously shows its age, but it’s not in a bad way at all. I’m picking up on aromas of fig, dark bread, tobacco, black cherry, vanilla, sweet caramel, pear skin, oak, and light peat smoke

The age comes through even more in taste, but once again, it’s more of a “mature” age rather than poor aging. On the front end of the sip I’m tasting molasses, brown sugar, raisin, tobacco, toasted coconut, sweet caramel, red apple, dark toast, and light fusel alcohol. The swallow brings notes of fig, sweet plum, smoked oak, tobacco, molasses, brown sugar, toasted pecan, caramel, and light honey

A full body pairs with very gentle carbonation, resulting in a slick and lightly boozy beer. Finishes a tad sticky and boozy but nicely complex

For as old as it is, this is honestly really good. I need to find a fresher one

This review is written blind. I have no clue as to what it is when writing this. All I know is it was bottled in 2010.

Looks - 4.5
Looking at this beer, it's a dark brown pour with a tan head, that didn't last long. Considering how old it is, I'm surprised there was any at all.The head dissipates into a ring around the edge of the glass. Just based on how it looked, I'm guessing barleywine.

Aroma - 4.25

Lots of dark fruit aromas - figs, raisin, plum. Slight hint of sweetness on the aroma. The nose screams barleywine.

Taste - 4.25

There's a good deal of the dark fruits that I got on the nose. Raisin, plum, figs all come into play here. There's a very slight bitterness that comes in on the backside. I doubt it could still be the hops, but, who knows. Some sweetness comes into play in the mix. I think it might barrel aged, not sure?

Body - 4.25

This beer is boozy, I do get some burn to it that hits way in the back. Fairly good body.

Overall - 4.25

Just guessing at how it poured, and the age of it, I'm guessing barleywine here. I could be wrong, but I don't think so. I also get the flavors of one. Whatever it is, I do like it.

Pours a very dark brown with a murkiness to the transparency. The final couple ounces were not poured into the glass, though the beer remains murky when the final ounces are introduced into the glass.. A big foamy head bubbles above the liquid, stacking above three fingers of height after a moderate pour. Frothy rings form around the glass after the lightest of swirls.

Aroma is caramel, fig, toffee, and a hearty hit of smoke. It's not raunchbier levels of smoke, but it's a notable intensity. Roasty, toasty, earthy, and bready malts sit underneath, leaning into toasty and earthy the most. More subtle notes of dark fruits and raisins come out as the beer warms slightly, with smoke still being the central, consistent feature throughout.

Flavor profile is caramel, toffee, fig, leather, and, again, hearty smoke. It's like drinking a smoldering campfire drizzled in caramel and a dash of whiskey. Whiskey notes don't really add heat, but really develop the leather quality. Dark fruits and chocolate start to come through more in the final half once the beer warms a little. Chocolate notes are not milk, bakers, or cocoa, instead coming by way of more raw dark chocolate. This bitter dark chocolate element helps to cut some of the smoke. As the beer warms, the smoke intensity starts to wane, or at least, that's the end result with the rest of the notes occupying a little more area of the flavor profile, putting less emphasis on smoke. This redistribution of notes helps smooth things out. Intensity as a whole is pretty moderate, not leaning into any note too firmly. It carries its 10% ABV well.

Mouth feel has a sand paper grittiness underneath that cuts and tears the otherwise creamy texture. Thickness is medium. This grittiness is the most aggressive part of this beer. Fortunately, the grittiness dissipates as the beer warms. What replaces it is a watery edge to the back of the beer, lacking oomph, but at least not abrasive.

Overall, a surprising amount of smoke in this old ale. It hits its notes, unapologetically while retaining its flowing footwork. The development of this beer from fridge to serving temp only further emphasizes the importance in serving at or near the correct temperature. The smoothness of this beer has only multiplied as it warms.

Served in a 15.5oz Spiegelau tulip from a 12oz bottle.

Dark brown body; fairly opaque; thin yet lasting light khaki colored head cascading foam rings encircle the glass. Wood and dark fruit aroma; a bit malty. Rich malt taste; nuts; leather; phenolic alcohol undercurrent. Thick and slick mouthfeel; warm boozy feel

A warm, earthy beer with a slow ass-kick element. A luxurious beer experience.
