Poured into a Lawson’s chalice.

Pale, hazy orange in color with a foamy white head, two fingers worth. When I put my nose to the glass I get loads of floral hops and the spruce is at the forefront as well. It’s not just piney hops – it smells like a genuine Christmas tree, freshly cut and watered. In the background there is tropical fruit – mostly grapefruit. The taste is like nothing I’ve had before. Drinking this in July is amazing because it reminds of Christmas. The spruce is everywhere in my mouth, as if I had been chewing on a spruce branch or walking through an alpine forest in the fog and breathing in cool, evergreen-soaked mist. Piney hops, grapefruit, juniper, teaberry, damp grass linger in the background. Mixing with the oily spruce, the juicy grapefruit creates an uncanny, yet delicious combination. This is an incredible IPA that drinks very easily. It’s great to find a beer that’s true to its name because so many are often not.

On tap at Prohibition Pig. Served in a snifter.

Appearance - Deep orange. Nice white head. Some lacing. A few wisps.

Smell - Tons of spruce. Like a rosemary beer. Some hops, but difficult to discern a specific aroma beyond pine. Definite caramel backbone.

Taste - The spruce blends nicely here. Comes in behind a bit of grapefruit hop. Caramel malt midrange as spruce takes over the flavor. Bitterness with a lingering pine flavor.

Mouthfeel - Medium bodied. A little bit sweet, which I really like.

Overall - Very tasty for a spruce beer. Certainly lacking in subtlety, but good.

First had: bottle from Waitsfield

Might have been a little bit past its prime when I finally got to this one, but it was still tasty. A careful pour into a Lawson's 12oz. flared pils glass yielded a mostly clear, coppery liquid, with a moderately-sized but long-lasting cap of foamy white head; streaky lacing. Lots of piney hops in the nose, as would be expected, background scents of sugary malts. Taste was piney and herbal--not too intense...probably mellowed out a little bit during the month or so it was in the fridge--sugary malts, lightly toasted bread. Medium body, lower carbonation, slick mouthfeel, quite nice overall.
