Notes / Commercial Description:
This is an American White Oak-aged version of Jai Alai India Pale Ale. The white oak adds smoothing notes of vanilla and slight hints of dill to the aroma and flavor profile. The finish is elegantly dry due to the light tannin notes from oak aging and though still loaded with hop flavor, hop bitterness is more restrained.

Poured from a 12 oz an into a Dogfish Head tulip

L: Cloudy medium copper pour. 1.5 fingers of off-white head. Spotty lacing.

S: Vanilla and hops... oak and citrus.

T/F: Caramel malts and bitter hops. Citrus and pine. Nice grapefruit... strong oak character with definite vanilla and faint spice. Smooth and creamy in mouthfeel. Medium carbonation. Finish is mildly sweet and citrusy.

O: Very nice barrel aged IPA. Kept the hop bitterness with some great barrel character. Really enjoyed this beer.

A- I'm on my second pour, so there's some sediment in here. Other than that, it's a lovely, clear bronze. Finger and a half of head with decent retention. Fades to a nice cap, leaving lacing on the glass.

S- Really interesting. Certainly some piney,resinous, and grassy hops with some citrus rind. Smells super green. Like pine trees in the spring. Touch of caramel. An herbal influence as well. Real nice.

T- You get the malty sweetness up front, then pine on the finish. Wood aging compliments this nicely, taking the edge off of the bittering hops. But, due to freshness, those hops still have a say. Love the flavor profile.

M- Medium carbonation, medium mouthfeel. This is smooth, clean drinking.

O- It's been some time since I last had regular Jai Alai, but, from what I remember, I like this much more. Beautiful nose and flavors. Would gladly drink this again.
