Notes: Sour beers are famous for long aging periods, wild microbes, and flavors that are more complex and intense than any other family of beer. Commonly referred to as Lambics, these beers were once only brewed in a specific region of Belgium and have recently made a migration to breweries of America. Imploring ancient techniques, Seven Day Sour is brewed with a first and second 'slims' process, and a malt bill built with over 30% raw wheat and 30% chit malt to dramatically drive up starches and proteins which our quirky wild microbes love to feed on. We sour this recipe with an advanced and progressive method utilizing a hot fermentation in the kettle with Lactobacillus, followed by a cool fermentation on brettanomyces; making this beer anything but simple. Seven Day Sour is a young and unblended gueuze showcasing a refreshing acidity and complex bretta notes.

This guy feels like a highly soured Berliner Weisse. It's light, quite bretty, and easy going. There is a good bit of carbonation that make's me think of a saison/farmhouse. There's an apricot/pear-ish aftertaste that lingers with some lacto sweetness. Trinity doesn't seem to get enough hype. I loved getting their stuff in my FoCo days.

Bright and clear golden body. Minimal and whispy head.

Vinegar and pears. Undeniable brett and lacto presence.

Sour apple and pear. Even a slight vinous quality before diving into a puckering effect. Funky.

Crisp, clean, light, sour.

I liked the sour and fruity combo. Very clean.

Wax dipped 375ml poured into straight pint glass. Pillow white head which dissipates after a minute or so. Cloudy, pale yellow. Smell is wheat with a slight brett funk and lemon. Tastes is intensely sour, loads of lemom, with a dry wheat finish. Overpowering at first but it definitely grows on you. I can tell it's a sour worting but only by the nose and it's not offensive. Very nicely done. Great summer sour.

Pour is pale straw yellow with a tight creamy white head. Nose is heavy brett, dusty and cob webby, hint of funk and lacto, a bit of hay like grain with an assertive lemon. Taste is also heavy brett, less funk with a fair bit of mineral and a touch of sulfer, lacto mid palate with a stronger grassy hay grain and huge lemon juice in back that gets a bit sweet. Carbonation is extremely strong, lightly dry finish and very delicate body.

i didn't want to like this, but I'm in love with it. some criticize it for cutting corners or deviating too far from tradition, but wight he beer tasting this good, i have no problems with it, and am actually real curious about the process. and oh, its sooo sour! crystal clear pale yellow with passive carbonation rising up into a half inch or so bone white head. its real clean looking, and has no haze at all until the bottom few drips are poured out into the glass. gorgeous appearance. a slight parmesan cheesy funk to the nose before the white vinegar lactic acidity kicks in and waters the mouth but basically destroys my ability to pick out subtle aromatic nuances. white grape maybe, very tart, very dry. the flavor is similar, more acidity than i know what to do with. more puckery than a lemon, but more flavorful too. i get the wheat, i get the brett, but this is totally dominated by the lacto. must have been a real warm fermentation to rock it out this quickly, id like to learn from the man who made this. shocking there is no oak on it, not that it exhibits any mellow wood character, but just these are usually done that way. way more sour than funk, but they are both there, and that cheesy thing drops out of the finish. splendid beer really, and finally a fairly priced one from trinity. all good things to say about this one, great carbonation and a light body, hot weather beer. i can forgive the bastardization of the term gueuze if it tastes this good.

A: Pours a clear golden color. A bubbly white head forms, and recedes to a ring. Light lace is left behind.
S: A mineral like aroma up front and center. Initially, almost sulfur like. Then some lemon rind comes into play. Slightly tart and acidic.
T: Mineral and sulfur like up front. Which is not completely out of sink with the style. Just not my cup of tea. A bit of acidic and tart lemon rind. A lingering acidity. Not bad, just not exceptional.
M/D: A light to medium body. Moderate carbonation, but not as crisp as I would like it to be. Plenty dry however. It is fairly acidic, but enjoyable to drink. No problem putting this away.

A decent Wild Ale. Nothing to spectacular. Certainly enjoyable, and all credit to try something new. Just not among my favorites of the style. Still, very much worth a try.

Pours a hazy light yellow with a foamy off-white head that settles to a film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is sour with malt, grain, funk, acidic, and Brett aromas. Taste is much the same with super sour acidic and funk flavors on the finish. There is a medium amount of acidity on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a pretty good beer with an interesting concept that I am glad I got to experience.

From a 375 ml waxed bottle into a tulip.

A-A normal pour produces quite a bit of white, shiny head, about three fingers. The head fades to a cap after a minute and then to a collar. No lacing. The beer is very light in color, the color of summertime sunshine, I guess. It is hazy and I can see some carbonation in there.

A-The aroma is funky with lots of barnyard and a good dose of brett character. Acidity is also pretty high with a biting lemon aroma that reminds me of a wheat beer at times. There is a bit of doughy bread underneath the tartness. Good, but not as complex as the best of this style.

T-The taste, like the smell, is heavy on the funk and sour flavors. I get lemon, a bit of lime, some wheat, some bread, and a lot of funky, brett-y flavors. The brew is pretty dry. There is not much subtlety here, but the flavors are tasty.

M-The feel is on the light side with a soft, but active, carbonation that fills the palate with big, chunky carbonation. Kind of odd, but not unpleasant.

O-This is a pretty good "American Gueuze." It does not quite match the Belgians in the complexity department and the mouthfeel is somewhat strange, but the funk and sour levels are high and this is a good gut-burning sour beer. I cannot recommend this beer for those who just dabble in sours, but if you're looking for something a little different (or a cheaper gueuze-like beer), this is a worthy choice.

This just wasn't good - after drinking so much flawless crooked stave, this just tasted like licking a petting zoo - definitively "barnyard". I couldn't finish it. Hell, I couldn't even come close to finishing it.
