Inspired by native ingredients we found during a local hike in Colorado, this beer won best of show in the "Beers Made by Walking" competition in 2012. Our use of amaranth grain imparts a toasty presence in the malt bill, mustard seed lends a nice spiciness to the beer that is balanced with a light citrus from lemon grass and an implied dried cherry essence from the use of rose hips.

Served On-Tap

A — Pours a bright hazy yellow with a tall stark white head. Nice lacing sits along the inside of the glass.

S — Smells of brettanomyces, wit, yeast, light malts, slight spice, peppery, lemony.

T — Lightly tart and acidic, mostly well balanced with rich wit and peppery tones.

M — Light-Medium bodied, very refreshing.

O — Nice yet again from TRiNiTY, good representation of brett, very well balanced.

Look: Foamed out of the bottle upon opening. Very active. Very hazy and a yellow/orange color. 3 finger head with moderate pour. Head sticks around (actually seems to grow with time). Foam is thick and fine - meringue like.

Smell: Smells grassy and slightly spicy. Quite fruity and citrusy.

Taste: Nice tart burst at first. Slight bitter, then slightly sour. Hay and fresh cut grass comes through. Quite sweet, but dries out only slightly. Fruit flavors swirl around. Light and refreshing.

Feel: Light -> Medium bodied. Stays active and quite fizzy the whole time I was drinking.

Overall: Very flavorful and refreshing. Earthy and grassy. Very Good.

12.7oz bottle, a new brewery to me and to the beer-swilling denizens of Alberta.

This beer pours a hazy, pale golden yellow colour, with a teeming tower of puffy, finely foamy, and somewhat creamy bone-white head, which leaves some mountain range snow line lace around the glass as it lazily subsides.

It smells of some fairly toasted pale graininess, a bit of tart yeast, some muddled dark orchard fruitiness, indistinct earthy spice, and a gentle estery floral character. The taste is grainy and crackery pale and wheat malt, some free-range toastiness, a twinge of edgy lemon rind, faded funky notes (Brett, is that you?), some subtle black peppercorn spiciness, and more understated dark floral acridity.

The carbonation is quite thorough in its aggressive, bottle conditioned-like frothiness, the body a decent medium weight, and actually more or less smooth, as the yeast and spice take a well-earned breather right about here. It finishes trending dry, the toasted nature of the grain informing the whole.

Overall, this is a pleasantly rendered version of the style, with the sidesteps and adjuncts not any cause for genre-bending concern. Easy to drink (once you get past the overzealous bubbles), and a nice introduction of this Front Range brewery's sudsy wares.

A: The beer is very hazy light yellow in color and has a moderate to high amount of visible carbonation; a few large clumps of yeast are visible near the bottom of the glass. The bottle erupted upon opening, and poured with a two finger high bright white head that died down, leaving a thin head covering the surface, a collar around the edge, and some streaks of bubbles down the sides of the glass.
S: Light aromas of oak, rose hips, and yeast are present in the nose; these become a little more pronounced as the beer begins to warm up.
T: The taste is much stronger than the smell, having flavors of grainy malts along with notes of yeast and hints of mustard seeds and rose hips.
M: It feels a bit shy of being medium-bodied on the palate and has a moderate amount of carbonation. Slight amounts of dryness are perceptible.
O: This beer is unique and has some interesting flavors, but seems somewhat heavier compared to other beers in the style. It would probably be a better saison to sample during the colder months and not on a hot summer day.

I had this beer on-tap in a mug at Special Brews in Lynnwood, WA.

Appearance: medium golden hue with a light-moderate haze and a strong effervescence. Head is a thick finger of frothy white foam; I quite like it.

Smell: lightly tart and funky; not especially complex but a well-done example of the style.

Taste: quite a bit of funk with a very mild tartness that rounds out the flavor well. Hops are grassy and evocative of springtime -- I dig it.

Mouthfeel: medium-light body with a good carbonation and creaminess. Works for me!

Overall: I like this beer a lot. It's refreshing and well-made with a nice balance of funk and a dash of tart.

Bought at Little's Wine and Liquor in Denver, CO. 6.99 for a 12.7oz bottle. Decided to try something without any opinion/ knowledge about the brewery. Bought for celebrating my first publication!

A&S: Super highly carbonated (foam came out of the bottle). Pours 2.5 fingers of fizzy white head that dissipate very quickly. With the beer vanishing so quickly I expected no head to be left, but it actually retains a layer on top (with thick circles that almost resemble bacteria growths in a petri dish). Beer is a lively with carbonation, murky very unfiltered light yellow. Super sour upon first opening, really milds out when in the glass. earthy, slight citrus, after a while way less funk.

T&M: Overall very subtle. Flowery hops, very like almost non-sweet corn like background. Barely any funk to it. Mouthfeel was on, it was on the lightish bodied and on the higher side of carbonation.

Overall: Wasn't a huge fan of this beer, I really love the idea of a beer inspired by hiking, but it was just a little bland for my taste. I would be interested in trying more from this company, but it would be on a recommendation only bases.
